It’s so easy and convenient! I’ll never make them any other way!

Ingredients

To make this TikTok recipe hack, you’ll need a few sets of ingredients:

For the guacamole stuffed quesadillas you’ll need:

  • Guacamole ingredients– Red onion, ripe avocadoes, tomatoes and a touch of salt.
  • Tortillas– Use the large buritto-sized tortillas over the smaller fajita or taco style ones.
  • Black beans– Precook them and season them to your liking. You can do this ahead of time.
  • Cheese– I used shredded mozzarella but you can use any mild cheese you like.
  • Butter– To melt in the pan prior to cooking the quesadilla.

For the sour cream sauce, you’ll need:

  • Sour cream– Full fat sour cream tastes the best in this.
  • Lime juice– Fresh lime juice will give you the best results but you can use bottled.
  • Seasoning– A little salt and fresh chopped parsley or cilantro.

How to Make

Making these is so easy!

To do it, start by making your guacamole by chopping the tomatoes and onion into small pieces.

Then mash the avocado and add salt to it. Set it aside.

To do this Tik Tok trick, you’ll need to cut the tortilla from the center to one edge.

This cut is key! It lets you to flip one side over the other to make it a layered triangle.

Once you cut it, you’ll have four quarters.

In two quarters on opposite sides, put some cheese.

Add some tomato over one side and some onion to the other.

Then, spoon some mashed avocado in the triangles that remain empty and place some black beans over it.

To fold it, flip one triangle over the next one clockwise.

Finally, add some butter to a skillet and once melted, cook each quesadilla from both sides.

To finish make the sour cream by adding chopped parsley or cilantro and lime juice to the sour cream and stirring it together.

I recommend serving these immediately and don’t recommend planning them as leftovers.

You can get creative with serving and serve them with not just sour cream, but fresh salsa and your other favorite toppings.

Tips and Tricks

  • With this recipe, you can be creative with your filling. As is, the recipe has raw onion to achieve the classic guacamole taste but you can cook the onion first for a milder flavor.
  • You can add other ingredients too. Make it veggie loaded with sautéed onion, bell pepper, carrots and zucchini. For a meatier quesadilla, you could stuff them with pulled chicken like this salsa chicken or even beef.
  • When you are choosing your avocadoes, go for ripe ones. They should feel firm with a slight give to them without being mushy. If you pull the little nub off the avocado, you should see light green and not brown.
