I fall firmly into the ‘love ’em’ category; in fact, I’ve never met a dill pickle I haven’t liked. That being said, not all pickles are the same, and some are definitely better than others.
For me that’s almost always the kind that are extra crisp with the right amount of crunch, maximum dill flavor infusion, and they’re always found in the refrigerated section of the deli.
Similarly, I’ve yet to meet a dill pickle flavored recipe I haven’t enjoyed. Whether it’s a chicken salad, potato salad, pasta salad, grilled cheese, or even a pickle de gallo. You just can’t go wrong with pickle flavored anything.

Ingredients Needed
While this cream cheese based dip does have a bit of a longer ingredient list than a lot of our typical dip recipes, all of the ingredients are easy to find.
To make it you’ll need:
- Pickles – Grillo’s pickle spears. If you can’t find the spears, you can use an equivalent amount of their dill pickle chips. While you drain the pickles before using them in the recipe, you’ll want to reserve a couple of teaspoons of the juice.
- Jalapeno – Seeded & finely diced. The finely diced bit is important, because it ensures a little bit in every bite and it also keeps it more about flavor and less about adding spicy heat.
- Onion – A bunch of green onions, both the white and green parts, thinly sliced
- Sour Cream – For best results use the full fat variety. You can use a low fat version, if needed, but it will result in a thinner less creamy dip.
- Greek Yogurt – Plain
- Cream Cheese – Whipped cream cheese. Be sure it says ‘whipped’ on the package and not ‘spreadable’, because they aren’t the same consistency.
- Ranch Seasoning Mix – Dry dressing mix. You can use the store bought variety or our homemade version.
- Cheese – Shredded cheddar cheese. Freshly shredded cheese will always yield the best and brightest flavor, but you can buy/use the pre-shredded kind here and it will still be delicious.
- Bacon – Crispy, crumbled bacon
- Hot Sauce – Use your favorite brand.
- Pepper – A blend of both ground black pepper and crushed red pepper flakes round out the flavor of this dip.
Once you’ve gathered all your ingredients, you’re ready to whip up a batch of this addicting dill pickle dip!

How To Make Grillo’s Pickle Dip
It’s always a win for me when I can throw something together in minutes that packs a tasty punch, and this creamy pickle dip is definitely quick to put together and still absolutely loaded with flavor.
Start by measuring out and setting a side a couple teaspoons of the pickle brine, then drain the pickles completely. Finely dice them and set them aside.
Add the sour cream, yogurt, cream cheese, and ranch seasoning to a large mixing bowl. Using a hand mixer, blend them together until the mixture’s completely smooth and extra creamy.
You don’t have to use a hand mixer, you can do it with a spatula by hand but it will be hard to get the even incorporation and ultra smooth consistency without feeling like your arm’s about to fall off.
Add all of the remaining ingredients to the bowl, then stir everything together until evenly combined.
Cover the bowl with plastic wrap, then chill in the refrigerator for at least 30 minutes or up to 1 hour.
Remove and uncover the bowl, then give everything a good stir and transfer the dip to a serving bowl.

- 1 cup shredded cheddar cheese
- 1/2 cup crumbled crispy cooked bacon
- 1 tsp hot sauce
- 1/2 tsp black pepper
- 1/2 tsp crushed red pepper flakes
Instructions
- Finely dice the pickles, then set them aside.1 32 oz container Grillo's pickle spears
