- 1 32 oz container Grillo's pickle spears drained, but reserve 2 tsp pf the juice
- 1 large jalapeno pepper seeded and minced
- 1 bunch green onions thinly sliced
- 1 cup sour cream
- 1 cup plain Greek yogurt
- 1 8 oz tub whipped cream cheese
- 1 1 oz pkt ranch dressing mix
- 1 cup shredded cheddar cheese
- 1/2 cup crumbled crispy cooked bacon
- 1 tsp hot sauce
- 1/2 tsp black pepper
- 1/2 tsp crushed red pepper flakes
Finely dice the pickles, then set them aside.

Add the sour cream, yogurt, cream cheese, and ranch to a large mixing bowl. Using a hand mixer, whip everything together until the mixture's smooth and creamy.

Add the remaining ingredients, including the finely diced pickles, to the mixing bowl. Stir in until everything's evenly combined.

- Grillo's pickles are extra crisp for a reason, and one of them is that they have to be refrigerated from creation to use. You won't find them on the regular store shelves; instead, they'll be in the coolers either near the prepackaged lunch meat or in the specialty section of the deli.
- If you can't find the pickle spears, you can use the same amount of their pickle chips in their place.
- Be sure you're using 'whipped' cream cheese, which is not the same as spreadable cream cheese.
- You can use the store bought variety of dry ranch dressing mix or our homemade version.
- Freshly shredded cheese will yield the best flavor, but you can use the pre-shredded kind if that works better for you and the dip will still be delicious.
- Don't skip the jalapeno pepper in this! Be sure to discard the seeds (they're where most of the heat is), and finely mince it. Believe it or not it won't make the dip spicy, but it does add a lot of flavor.
- If you're on the fence about this dip being too pickly, you can halve the amount of pickle used or omit the pickle juice. There's so much overall flavors working together though that even my non-pickle lovers enjoyed it when prepared as written.
