Chicken & Broccoli Grilled Cheese
Chicken and broccoli grilled cheese is a grown up version of the childhood classic. This ooey gooey comforting sandwich gets an upgrade with loads of shredded chicken, steamed broccoli and a delicious combination of cheeses and spreads all cooked between two pieces of buttery bread.
Grilled cheese is definitely a nostalgic favorite.
And this version of the classic sandwich gives it a grown up update that make for a really satisfying meal for both grown ups and kids alike.
Loaded with shredded chicken and broccoli, this sandwich has my kids happily eating their veggies, which makes me one happy mama.
Ingredients
To make this, you’ll need:
- Chicken– Shredded or finely chopped cooked chicken. This is a great way to use up your leftovers or stretch a rotisserie. Don’t have a store bought rotisserie chicken handy? Make your own in your air fryer to use in this recipe!
- Broccoli– Steamed and finely chopped
- Cheese– Shredded cheddar and Parmesan
- Seasoning– Garlic powder and salt and pepper
- Condiments– Mayonnaise and Dijon mustard
- Bread– Slices of your favorite bread
- Butter
How to Make
These chicken and broccoli grilled cheese sandwiches are so easy to make!
Just combine the chicken, broccoli, cheddar, Parmesan, garlic powder, mayonnaise, Dijon mustard, and salt and pepper in a medium bowl.
Then, divide the mixture evenly between four of the bread slices.
Close the sandwiches by topping them each with another slice of bread.
Once you have assembled the sandwiches, melt the butter in a pan over medium-low heat.
Then cook the sandwiches in melted butter for about 3-4 minutes per side or until the bread is golden brown and the cheese has melted.
Serve and enjoy!
Serving Suggestions
Chicken and broccoli grilled cheese is sort of a complete meal on its own depending on your appetite of course.
But it does have protein, veggies, and carbs so it’s nice and filling.
If you are particularly hungry or have kids with big appetites it pairs well with:
- tomato soup
- broccoli cheddar soup
- fries
- a side salad
- fruit
Storing Leftovers
I don’t recommend storing leftovers of the assembled sandwiches.
However you could save leftover filling in an airtight container in the fridge for 3 days so it’s ready whenever you want to make these.
Tips and Tricks
- Covering the pan with a lid during cooking will help the inside get all warm and gooey before the bread gets too browned.
- Feel free to switch up the mayo and Dijon with other condiments if you prefer. A good substitute would be 2 tablespoons of ranch dressing.
- While the recipe calls for cheddar and Parmesan, you can use any cheese you like.
