Ingredients

To make this you’ll need:

  • Sunflower oil– You could use olive oil but sunflower oil gives you the closest consistency and flavor to store bought mayo.
  • Egg yolks– Just the yolks! Discard the whites or set them aside to use in a different recipe.
  • Mustard– Any kind you like
  • Salt
  • Lemon juice

How to Make

Making homemade mayonnaise is as easy as whisking a few ingredients together.

To do it, whisk the egg yolks, salt, mustard and lemon juice together in a medium bowl for a few minutes.

Whisking constantly add a little bit of oil at a time until all the oil is added.

How long is homemade mayo good for?

I recommend storing it in an airtight container in the refrigerator for no more than 7 days just to be on the safe side!

If using unpasteurized eggs, only store for 3 days in the refrigerator.

Do I have to use sunflower oil?

No!

Sunflower oil is mild and produces mayonnaise that tastes sort of like store bought brands.

But traditionally mayonnaise was made with olive oil and you can absolutely use olive oil in yours!

It will produce a richer, fruitier mayo than sunflower oil.

Tips and Tricks

  • Make sure all the ingredients are room temperature. They won’t combine properly if they are too cold.
  • You need to add the oil super slowly to the mixture. If you add the oil too quickly, the mayo will curdle.
  • When it doubt, keep whisking!
