Tex Mex Grilled Cheese

Tex Mex grilled cheese features ground beef seasoned with all the best southwestern flavors and gooey melted cheese between buttery slices of toasted bread. These sandwiches are a perfect update to the standard and a fun twist for taco night.

I don’t care what anyone says.

You can never be too grown up for a good grilled cheese sandwich.

When my boys were young, we’d often order one extra kids meal out in restaurants so I could enjoy the comfort food with them.

And I love to make the classic version at home.

But I also love to dress them up and turn them into a hearty meal that will keep all my boys fed and full.

This Tex Mex grilled cheese, or you might call it a taco grilled cheese, is just that.

Ingredients

To make this you’ll need:

  • Ground beef– Go for leaner beef so you don’t have overly greasy meat.
  • Taco seasoning– Use your favorite kind in the packet.
  • Salsa– Any variety or even homemade.
  • Green chiles– Diced and canned. These are optional.
  • Bread– Just plain old fashioned white bread or whatever other kind of bread you like.
  • Butter- To toast the bread in.
  • Cheese– Ok, so actually cheese product. I recommend Velveeta because it melts beautifully, but you could use cheddar or American cheese if you prefer.

How to Make

Making these grilled cheese sandwiches with taco meat is super easy.

In fact, they are so easy you can make them for a quick dinner any night.

To do it, brown the ground beef in medium sized skillet over medium heat.

When the beef is cooked through and no longer pink, drain the fat.

Then, mix in taco seasoning according to package directions.

Stir in the salsa and green chiles.

Set the beef mixture aside.

Then, butter one side of each slice of bread.

Cut Velveeta into 6 pieces.

In a large skillet place two pieces of bread, buttered side down.

Top each piece of bread with one slice of Velveeta.

On top of Velveeta spoon 1/6 of hamburger mixture. P

Top with another slice of bread, buttered side up.

Cook over medium heat until bread is golden brown.

Flip the sandwich and repeat on other side.

Repeat until all sandwiches have been made.

Serve and enjoy!

Can I make these ahead of time?

Like most sandwiches, I would not recommend making them ahead of time.

However, you can make the beef ahead of time and store it in an airtight container in the fridge until you are ready to use it.

Serving Suggestion

Sure, you can serve this with tomato soup for the classic combo, but you can also serve these sandwiches with all your favorite taco fixings for dipping.

We love them with sides of:

  • salsa
  • sour cream
  • guacamole
  • queso (Yes! Dip your grilled cheese in more cheese! It’s fabulous!)

Tips and Tricks

  • Want to skip the beef? Feel free to substitute ground chicken or turkey or even drained and rinsed black beans instead.
  • For a spicier twist, add some sliced jalapenos or pepper jack cheese.
  • This is the perfect way to use up taco night leftovers.

Ingredients

  • 1 lb ground beef
  • 1 packet taco season

    OMG, these pictures are TOTAL FOOD PORN. Thank you for the excellent recipe/idea to use up my taco night leftovers! I find it kinda sick that the recipe makes 5 (perfect for me) – I’m assuming for your FAMILY – but I’d make 5 also – for 3 of us! Hubby & I will have 2 each. Mom will have 1. No, our house knows no moderation. The only thing I changed was I used sliced sharp cheddar vs the Velveeta. I like what appears to be sliced fresh jalapenos on the outside of the bread in the “stacked” photo – if that’s what it is, I’m going to try that! Thank you again. I’ve been a subscriber and LOVE your recipes!
