Going out for ice cream is practically a requirement in the south at least once during the summer.
Truthfully we’d do it more but it is really expensive to treat all 6 of us to ice cream shop ice cream.
So instead of deprive ourselves of all the goodness of gourmet ice cream we make our own at home.
With no churn ice cream being such a delicious thing, we can make it anytime without going through the hassle of pulling out the ice cream maker or making a custard base.
Ingredients
To make this, you’ll need:
Heavy cream– Don’t substitute a lower fat cream.
Milk– Whole milk is best.
Brown sugar– Light brown
Cocoa powder– Unsweetened
Salt– To balance the sweetness
Vanilla extract– The real stuff not imitation.
Mix ins– Hot fudge and your favorite brownies, chopped.
How to Make
To make this chocolate ice cream recipe, use the whisk attachment to beat the heavy cream in the bowl of a stand mixer on medium speed until it slightly thickens.
Then, add the milk, brown sugar, cocoa powder, salt, and vanilla to mixing bowl.
Beat on medium speed for 5 additional minutes.
Once time is up, pour the mixture into a metal loaf pan.
Freeze the loaf pan for 90 minutes.
Remove ice cream from the freezer after 90 minutes and spread out the chopped brownies and dollops of hot fudge over the entire surface of the ice cream.
Use a knife to swirl it into the ice cream.
Cover the pan with foil or plastic wrap and freeze for 8 hours or overnight before serving.
Serve and enjoy!
How long will no churn chocolate ice cream last?
If you keep it tightly covered or transfer it into an airtight, freezer safe container it should last for about a month.
Other Mix In Ideas
This fudge brownie ice cream is already a chocoholic’s dream, but you can really take it over the top and add other mix ins as well like:
- mini chocolate chips
- crushed Oreos
- chocolate sprinkles
- any chocolate candy you like
Tips and Tricks
- Don’t skip the 90 minute freeze time before adding the brownies and fudge swirl to the ice cream. This helps the ice cream set up so that they don’t sink straight to the bottom, instead staying suspended in the ice cream and evenly dispersing.
- Make sure to wrap it tightly to store it so your no churn ice cream doesn’t get icy in the freezer.
- Let the ice cream sit on your counter for a few minutes to soften prior to scooping it.
- This ice cream’s delicious alone or as part of a sundae!

Yay, This looks awesome. I’m so excited to try this!!! I love Ice-cream but and ice-cream machine is not something I will own for a long time. Love this recipe!!!
Thanks! Truth be told for a long time we couldn’t even afford one of those fancy ice cream machines, so we learned in one of our earliest posts how to make ice cream in a bag. Then we got the oh-so fun ball, but this is so stinking easy. And I love being able to say yes on hot days like today when the kids come in from playing outside and are hoping we can make a nice cool treat 🙂
Looks so yummy! And seems pretty easy to make too!
Yes, and yeeeessss! It’s life changing 🙂
Chocolate Fudge Brownies? yumm! Chocolate Fudge Brownies Ice Cream? Even better! It looks great and I’m sure it tastes fantastic as well 😀 Thanks for sharing them at Fiesta Friday!
