If you’re new around here, it’s not secret that I absolutely love my outdoor smoker- almost as much as I love my slow cooker.

It’s the outdoor equivalent of ‘set it and forget it’ cooking for me, and I keep it going pretty much all Summer long. It’s gotta earn it’s keep after all!

Over the years I’ve discovered many things that benefit from a little ‘smoke’, including something as simple as a snack like potato chips.

Elevate something as simple as a classic ruffle chip with an infusion of wood smoke flavor for a savory treat that’s easy to make, but tastes gourmet.

Once you’ve tried our smoked potato chips, you won’t want to enjoy them any other way!

Ingredients Needed

Like all my favorite recipes, smoked potato chips have a very simple short ingredient list. Only three!

You’ll need:

  • Chips – Plain wavy potato chips. I typically use Ruffles, but you can use any brand you know and like.
  • Cooking Spray – Nonstick cooking spray
  • Barbecue Rub – Use your favorite variety since the flavor will be prominent.
  • Baking Dish – A disposable 9×13″ aluminum pan.

Once you’ve gathered all your ingredients you’re ready to begin!

How To Make

Making smoked potato chips is super simple!

Start by spreading the potato chips out in the pan in an even layer, then spray the chips with nonstick cooking spray.

Sprinkle half the barbecue rub evenly out overtop of the chips, then gently toss them together and spread back out in an even layer.

Spray the chips again with nonstick cooking spray again, and sprinkle the remaining rub evenly out overtop.

Smoke the chips at 225F for 1 1/2 – 2 hours, shaking the tray halfway through.

Carefully remove the hot tray from the oven, set it aside, and allow the chips to cool completely.

Once cooled the chips are ready for snacking!

Serving Suggestions

Like classic potato chips, these pair really well with a good dip recipe. We love it with a hot dip like our baked buffalo chicken dip. It’s also really good with a cold dip, like this creamy bacon horseradish dip recipe.

Also like traditional chips these pair very well with a good sandwich. Try serving them with our 15 minute barbecue beef sandwiches, these chopped sub sandwiches, smoked chicken salad, or even our grilled mac and cheese sandwiches.

They’re also great all by themselves!

Storing

Completely cooled leftover chips can be stored in a ziplocking bag, or airtight container, for up to a week.

There’s no need to refrigerate them.

Other Seasonings For Smoked Potato Chips

While barbecue rub seems like the most logical choice for a batch of smoked potato chips, we’ve tried them with other seasonings with great results.

Some of our favorites include:

  • Old Bay
  • Everything Bagel Seasoning
  • Garlic Powder
  • Ranch Dressing Mix

Feel free to shake things up and try them using your own favorite seasoning or seasoning blend!

What Wood Chips Are Best To Use For Smoking Potato Chips?

While you can generally use any wood chips, some are better for certain things than others.

For smoking chips I recommend using one of the following:

  • Maple
  • Hickory
  • Cherry
  • Mesquite

These are our favorite wood chips to use for best results, but feel free to use whatever you prefer or have handy.

Do I Have To Use Wavy Chips?

No, you don’t although it’s recommended for the rub adhering better as well as the superior crunch. However you could also substitute a plain flat chips like plain Lay’s and the recipe will still work.

Tips & Tricks

  • This recipe easily doubles, or even triples, if you’re trying to feed more than just a few people- especially at a Summer barbecue.
  • Wood smoke will leave tough concentrated stains on any dishes used which can be difficult to remove, so I recommend using a disposable 9×13″ aluminum pan.
  • You can easily make several tray of these chips at one time depending on how much space is in your smoker, so you’ll have them to enjoy all week long.
