Every time I end up scrolling through TikTok, I seem to come across another viral recipe idea that I simply have to try.

Boat Dip, Chopped Sub Sandwiches, Air Fryer Crab Bites, Grinder Salad– all amazing, and all are now staples on our family menu.

We love Mexican street corn salad, so when I saw the idea to turn it into a dip- well that was just genius.

Then I saw that it was going viral because someone had decided to turn it into a smoked street corn dip, and my mind was pretty much blown.

We’ve been making this all Summer long, and bringing it to all the barbecues.

I highly recommend you whip up a batch of this smoked street corn dip asap, and taste what all the fuss is about.

Ingredients Needed

Like all the best viral recipes, this smoked Mexican street corn doesn’t require a super long list of ingredients.

To make it you’ll need:

  • Corn – We use canned corn in this recipe for convenience, but you could also use frozen corn. If you opt to use frozen corn make sure it’s completely thawed and drained beforehand.
  • Sour Cream – I recommend using full fat sour cream in this, because fat free has a much thinner consistency that will lead to a runnier end result.
  • Cheeses – This dip uses a blend of crumbled cotija and shredded pepper jack cheeses.
  • Mayonnaise – You need real mayonnaise for this as that’s the predominant taste in authentic street corn. Don’t sub miracle whip.
  • Lime Juice – You can use fresh or the pre-squeezed kind.
  • Cilantro – One whole bunch of fresh cilantro. Be sure to wash it well since dirt & grit like to hide in the leaves, then remove the stems, and roughly chop the leaves.
  • Tajin – Tajin is a Mexican seasoning made from a blend of ground peppers, lime, and salt. It can be found in the Hispanic section of most grocery stores. It’s both an ingredient and an optional garnish for this dip. You can order it HERE.

How To Make

Making this dip is quick and easy.

Start by preheating your smoker to 300F.

Then add all of the ingredients to a large cast iron skillet, but don’t try to mix them together yet.

Carefully add the skillet to the hot smoker, and let it cook for 1 hour- stirring (carefully!) halfway through at the 30 minute mark.

Cook the dip until an hour has elapsed, or it’s hot and bubbly and the cheese has melted and easily incorporates when stirred together.

Carefully remove the skillet from the smoker, and let it rest a full 5 minutes while it cools and sets up some.

Garnish with extra crumbled cotija, a sprinkle of tajin, and a fresh squeeze of lime. While recommended, all of the garnishes are optional.

Serve warm with your favorite options for dipping.

Dipping Options

Like any good dip, having a variety of options for dipping are important- especially when serving a crowd at barbecues and tailgates.

Some of favorites for this are:

  • Tortilla Chips
  • Crackers
  • Raw Vegetables – like carrots, celery, or even radish chips
  • Corn Chips
  • Toasted Baguette Slices

Storing Leftovers

If you have leftover smoked street corn dip, let the cool completely then store in an airtight container in the refrigerator for up to 3 days.

When ready to enjoy again, add the leftovers to a skillet on the stove top. Stir in a splash of milk and heat, stirring often, just until it’s hot & bubbly again.

What Wood Chips Are Best For Smoking Street Corn Dip?

Since this corn dip doesn’t stay in the smoker for a long time, I recommend using a heavier wood to ensure it gets sufficiently infused with smoky flavor.

I would recommend using either oak, hickory, or mesquite.

You could use a blend of two, or all three, depending on your preference and availability.

TIPS & TRICKS

  • Don’t have, or don’t want to use, a cast iron skillet? Use a disposable aluminum pan instead.
  • Want a heartier dip? You can add chopped rotisserie chicken to this or even cooked ground beef. Crisp, crumbled bacon would also be a delicious addition.
  • If you don’t have a smoker, you can bake this in an oven. Add a couple drops of liquid smoke, and bake at 350F until the mixture’s hot & bubbly and the cheese has melted. Stir together, and serve as instructed.

Ingredients

  • 3 15 oz cans corn kernels drained

  • Smoke at 300° for 45 minutes - 1 hour, stirring halfway through, just until the cheese is melted and the mixture's hot & bubbly.
  • Carefully remove the hot skillet from the smoker, and let the dip rest for 5 full minutes.
  • Top with extra crumbled cotija and a sprinkle of tajin, if desired.
  • Serve warm with your favorite dipping options, and enjoy!
