Pickle De Gallo

Pickle de gallo is a dill pickle lover’s version of pico. The traditional Mexican fresh veggie topping gets jazzed up with briny pickles and is perfect for loading onto tacos and salads.

I am obsessed with pickles.

Seriously, I put them in everything.

I may need a pickle-vention.

We’re talking Dill Pickle Bread, Dill Pickle & Onion Grilled Cheese SandwichesDill Pickle Dip….

Well, that’s just scratching the surface.

Now we’re adding dill pickles to pico de gallo and it is amazing.

What is pickle de gallo?

Pickle de gallo is basically a fresh, chunky pickle salsa loaded with dill pickles, tomatoes, peppers, onions, and garlic.

It’s delicious on tacos, salads, nachos, hot dogs, hamburgers….

The sky is the limit for this zesty, briny condiment!

You can find it in some stores but the homemade version is so much better.

Ingredients

To make this, you’ll need:

  • Pickles– Use dill pickles. Chop them up into equal sized, small pieces.
  • Diced veggies– Roma tomatoes, a small green pepper, and a small yellow onion.
  • Garlic– Mince fresh garlic for best results.
  • Pickle juice– Use some from the jar.
  • Salt– Just a pinch.

How to Make

This homemade pickle salsa is so easy to throw together!

Just add all the ingredients to a bowl and toss them together.

Then seal the bowl tightly with plastic and refrigerate it for an hour.

Toss again and serve and enjoy!

Serving Suggestions

You can put this tangy condiment on almost anything. Some of my favorite ways to serve it include:

  • slathered on hot dogs and hamburgers
  • as a topping for tacos, burritos, and nachos
  • on a salad
  • to garnish grilled chicken
  • on top of a fluffy baked potato
  • as a dip for chips or veggies

Is pickle de gallo spicy?

This recipe is not spicy. No hot peppers are used in it.

If you would like it spicy, add a seeded diced jalapeno.

Tips and Tricks

  • While any dill pickles will work, for the best results I recommend the refrigerated variety as they’re nice & crisp
  • You can serve this immediately, but the chill time allows the flavors to meld & marry nicely
  • Best used within 3-5 days so maintains its crispness.

Ingredients

  • 2 cups chopped pickles
  • 3-4 large roma tomatoes seeded & diced
  • 1 small green pepper seeded & diced
  • 1 small yellow onion peeled & diced
  • 1 tbsp minced garlic
  • 2 tbsp pickle juice
  • pinch salt

Instructions

  • Add all of the ingredients to a medium sized mixing bowl. Stir them together until evenly combined.
  • Cover the bowl with cling wrap and chill for 1 hour.
  • Uncover, stir well, and serve.
