Buffalo Chicken Nachos

Buffalo chicken nachos are a fresh spin on a classic appetizer or entree. A pile of tortilla chips gets smothered in zesty chicken, creamy ranch dressing, and tons of cheese for a quick dinner or party appetizer that’s finger lickin’ good!

I am all about easy ways to feed a crowd.

With so many hungry boys under foot, I have to be!

These buffalo chicken nachos are a perfect quick dinner or appetizer that make everyone in the house happy!

Yes, I did say dinner.

They do include veggies so I feel totally fine feeding this to the kids as a meal.

Plus, they are super quick and loaded with the cheesy nacho flavor you love and the bold spicy chicken flavor my boys can’t get enough of.

And they are a fab way to use up your leftover chicken or any veggies that are on their way out.

So, I say, dinner is done with these bad boys.

Ingredients

To make these you’ll need:

  • Chicken breasts– This is perfect for using up grilled chicken breasts or rotisserie chicken.
  • Veggies– Shredded lettuces and chopped tomatoes. Diced red onions are also an option.
  • Ranch dressing– I like to blend ours with some cilantro to make a zesty herby ranch. You can skip this if you want or even substitute blue cheese if you prefer.
  • Cheese– Shredded Mexican blend or cheddar cheese.
  • Buffalo sauce– You can make it homemade or use your favorite store bought brand. I recommend Frank’s.
  • Water– To thin out the sauce.
  • Tortilla chips– Your favorite brand, but you could also use nacho cheese Doritos instead.

How to Make

These are so easy to make!

To do it, start by heating the buffalo sauce and water in a small pan. 

When it’s warm, toss the chicken in.

Then start assembling the nachos on a baking sheet.

Start by spreading out half of your desired amount of tortilla chips followed by half of the lettuce, tomatoes, dressing, cheese, and chicken.

Then repeat to make the next layer.

Spread any remaining cheese on top.

Bake at 375 for 10-13 minutes or until the cheese is melted.

Serve and enjoy!

Storing Leftovers

I don’t recommend making enough to have leftovers. 

The chips and toppings will get soggy in the fridge.

Other Topping Ideas

You could customize these buffalo chicken nachos by adding other toppings. We also like:

  • chopped red onions
  • fresh herbs like scallions or cilantro
  • blue cheese crumbles
  • avocado slices
  • jalapeno wheels
  • black beans

Tips and Tricks

  • The amounts are just a suggestion. You can use more or less of anything that you’d like to make these the perfect size for your crowd.
  • Feel free to get creative with your toppings.
  • Use your favorite buffalo sauce to get the perfect heat level.

Ingredients

  • 2 grilled chicken breasts shredded
  • 1 1/2 cups shredded lettuce
  • 1 cup chopped tomatoes
  • 1/2 cup Ranch Dressing I put my ranch in the blender with some cilantro and blend together for our dressing
  • 3/4 cup shredded mexican blend or cheddar, cheese
  • 1/2 cup buffalo sauce
  • 1/4 cup water
  • tortilla chips
US Customary - Metric

Instructions

  • In a small pan, heat up buffalo sauce and water.
  • On a baking sheet start layering the nachos.
  • -spread half the desired amount of tortilla chips
  • -spread 1/2 the lettuce
  • -spread 1/2 the tomatoes
  • – drizzle 1/2 the Ranch dressing
  • – spread 1/2 the cheese and 1/2 the chicken over it
  • Repeat to make the next layer.
  • Sprinkle the remaining shredded cheese over the top.
  • Bake at 375 degrees for 10-13 minutes.
