Meatball Sub Casserole

This meatball sub casserole has got everything you love about the classic sandwich. Rich tomato sauce and melted mozzarella smothers juicy meatballs on a bed of fluffy Italian bread that’s been spread with herbed cream cheese. Everyone’s happy with this recipe!

And dinner doesn’t get much better than a classic meatball sub sandwich.

Only trouble with the classic meatball subs?

They can be pretty messy.

This meatball sub casserole turns those messy sandwiches into an easy to make meal you eat with a knife and fork, taking away a lot of the mess.

Yes, there will still be some mess- especially if you’re eating it with kids, but not as much!

Ingredients

To make this you’ll need:

  • Italian bread– The kind from the bakery section. Cut it into 1 inch slices.
  • Cream cheese– Softened
  • Mayonnaise– Real full fat mayo
  • Italian seasoning– Your favorite seasoning blend
  • Cheese– Both mozzarella and Parmesan cheese
  • Meatballs– Either homemade meatballs or thawed store-bought frozen meatballs
  • Pasta sauce– Again either homemade sauce or your favorite jarred sauce

How to Make

This meatball sub casserole is so easy to make and so delicious to eat!

To do it, arrange the bread slices evenly out in a 9×13″ baking dish you’ve sprayed with nonstick spray.

Break up any extra pieces of bread to fill in any gaps.

Then, stir together the cream cheese, mayo, and Italian seasoning in a small bowl until it’s all evenly incorporated.

Spoon the cheese mixture over the bread in dollops, and then spread the  mixture evenly out over the bread.

Sprinkle the 1/2 cup of Parmesan evenly out over the top of the prepared bread.

Toss together the meatballs and the sauce together in another bowl until the meatballs are well coated in the sauce.

Spoon the the meatball mixture and all the sauce evenly out over the casserole.

Sprinkle the remaining cheese evenly out over the top.

Bake the casserole at 350 degrees for 30-35 degrees or until the top of the casserole is golden brown and bubbly.

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 3 days.

Reheat in the microwave or in a hot oven until warmed through.

Tips and Tricks

  • You can use any kind of meatballs you’d like. Chicken, beef, turkey, etc. are all ok.
  • If you want the casserole to stay together more when you serve it, let it rest for 5 minutes or so after you take it out of the oven before cutting it.
  • Don’t forget to spray the casserole dish with cooking spray so it doesn’t stick!

Ingredients

  • 1 loaf Italian bread cut into 1" slices
  • 4 oz cream cheese softened
  • 1/4 cup mayonnaise
  • 1 tsp Italian seasoning
  • 1 1/2 cups mozzarella cheese
  • 1/2 cup Parmesan cheese
  • 1 26-32 oz bag large frozen meatballs thawed
  • 1 28 oz jar pasta sauce

Instructions

  • Lightly spray a 9x13" casserole dish with non stick cooking spray. Arrange the bread slices evenly out in the baking dish, breaking up extra pieces to fill in any gaps.

  • In a small mixing bowl, add the cream cheese, mayo, and Italian seasoning. Stir the mixture together until evenly incorporated.
    4 oz cream cheese, 1/4 cup mayonnaise, 1 tsp Italian seasoning
  • Spoon the cheese mixture over the bread in dollops until it's all used. Use a spatula, or the back of a spoon, to spread the cheese mixture evenly out over the bread. Sprinkle the 1/2 cup of Parmesan evenly out over the top.
    1/2 cup Parmesan cheese
  • In a separate mixing bowl, toss together the meatballs and the sauce until well coated.
    1 26-32 oz bag large frozen meatballs, 1 28 oz jar pasta sauce
  • Spoon the the meatball mixture evenly out over the casserole, including all sauce. Sprinkle the remaining cheese evenly out over the top.
    1 1/2 cups mozzarella cheese
  • Bake the casserole at 350 degrees for 30-35 degrees, or until golden brown & bubbly.
