Crispy Roasted Parmesan Potatoes

Crispy Parmesan roasted potatoes are a delicious side dish or appetizer that both kids and adults will love! These crunchy cheese crusted spuds get served with a smoked paprika aoili for extra dippable goodness. Perfect for holidays and Sunday dinners!

We are definitely a meat and potatoes kind of family.

My family would never turn down any type of spud and they definitely ask for these parmesan roasted potatoes often.

The texture is spot on with a crunchy exterior and fluffy interior.

Plus, the butter cheesy taste is always a hit and pairs well with any roast meat or poultry you can think of.

And they require less work than both mashed potatoes and smashed potatoes so I am happy to make them almost anytime!

Ingredients

To make these you’ll need:

  • Potatoes– Use baby potatoes or smaller creamer sized potatoes. 
  • Butter– Melted
  • Parmesan Cheese– Grated and not shredded
  • Spices– Garlic powder and onion powder
  • Aoli Ingredients– Mayonnaise, lemon juice, dijon mustard, garlic powder, smoked paprika, and salt and pepper

How to Make

To make this, start by cleaning the potatoes and patting them dry.

Then cut them in half lengthwise and set them aside while you prepare the baking dish.

To prepare the baking dish, spread the melted butter into a 9×13″ baking dish and sprinkle the grated Parmesan cheese and spices out overtop of the butter.

Lay the potatoes, cut side down, in the baking dish.

Make sure each sliced bottom is touching melted butter and cheese.

Bake them at 400° for 30-35 minutes.

Carefully remove the potatoes from the oven, and then set them aside to cool slightly.

After a couple minutes, use a spatula to remove the crispy potatoes from the pan.

Transfer them to a paper towel lined serving dish and make the aioli.

To make the aioli whisk all of the dip ingredients together in a small mixing bowl.

Serve this cool dip alongside the crispy potatoes and enjoy!

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 3 days.

Reheat in a hot oven until warmed through.

What to Serve Parmesan Roasted Potatoes With

These potatoes make a delicious appetizer for a party.

They are also a fabulous side and pair well with:

  • roast turkey or chicken
  • ham
  • roast beef
  • pork chops

Tips and tricks

  • Smaller creamer style potatoes make these crispy ‘bites’ perfect for a side dish or an appetizer.
  • You can use larger potatoes, but will need to increase the cook time by 15-20 minutes, at least.
  • Don’t want to make a special dip? Ranch dressing or plain sour cream both make delicious dipping options.
  • You may need to nestle the potatoes together in the baking dish. If you do, that’s ok. Just be sure the cut side is laying flat against the dish.
  • When you are removing the potatoes from the dish, they may come away individually or in pairs.

Ingredients

For The Potatoes

  • 1 1/2 lbs baby/little potatoes
  • 1/4 cup melted butter
  • 1/2-3/4 cup grated Parmesan cheese NOT shredded
  • pinch garlic powder
  • pinch onion powder

For The Smoked Paprika Aioli

  • 1/2 cup mayonnaise
  • 1 tbsp lemon juice
  • 1 tsp country Dijon mustard
  • 1 1/2 tsp smoked paprika
  • 1/8 tsp garlic powder
  • salt & pepper to taste

Instructions

  • Wash and scrub the potatoes, then pat them dry. Cut in half, lengthwise.

  • Sprinkle the grated Parmesan cheese evenly out overtop of the butter, then sprinkle the garlic & onion powder out overtop.
