Cheeseburger Quesadillas

Crispy cheeseburger quesadillas combine two of your favorite flavors in this quick and easy recipe. It’s a yummy union sandwiching juicy seasoned hamburger filling in between layers of gooey cheese inside a crispy golden brown tortilla shell. These cheesy burger quesadillas are a delectable, dip-able hybrid you’re going to want again and again!

If there’s one thing my family loves, it’s a good burger.

Seriously, we’ve tried all kinds of burgers in our love of the classic sandwich. Pizza Burgers, smoked burgers, chicken burgers, even Mongolian barbecue burgers.

Can’t all agree on what to have for dinner? Burgers. My kid’s answer is, and will, always be burgers. Cheeseburgers specifically.

There’s just something so good about the classic combination of a juicy burger and gooey melted cheese that can’t be beat.

While I know this somehow I somehow still manage to occasionally run out of them, and have to get creative.

Don’t have burgers? Don’t have buns? Get your fix by sandwiching a juicy ground beef filling in between layers of shredded cheddar cheese folded into a flour tortilla and make quesadillas!

Grilled to crispy perfection these cheeseburger quesadillas are a fast fix option that will your craving for the classic cheeseburger and are ready in under 20 minutes.

Ingredients Needed

These beefy quesadillas may pack in big flavor, but their ingredient list is surprisingly simple.

To make them you’ll need:

  • Beef – Ground beef. You can use lean ground beef, if preferred, but an 80/20 blend will yield the best flavor.
  • Onion – Diced red onion, although white or yellow onions would also work in this recipe.
  • Sauce – A blend of ketchup, yellow mustard, dill pickle relish, and Worcestershire sauce infuse the ground beef with traditional ‘burger’ flavors.
  • Seasoning – A simple touch of salt and pepper 
  • Cheese – Shredded cheddar cheese, either mild or sharp will work depending on your personal preference.
  • Tortillas – Burrito size flour tortillas, NOT corn tortillas. I don’t recommend using a smaller sized tortilla since they can be much harder to fold and hold in the ingredients when initially flipped.

Once you’ve gathered all your ingredients you’re ready to throw these bad boys together!

How To Make

Quesadillas shouldn’t ever be hard to make and this flavorful cheeseburger version is no different.

Start by adding the ground beef to a large skillet set over medium high heat. Cook the ground beef, stirring often, and breaking it apart until cooked through and completely browned throughout.

Drain or strain the ground beef to remove all excess grease then return the cooked beef to the skillet.

Add the onion, ketchup, mustard, relish, and Worcestershire sauce to the skillet. Stir everything together until the mixture’s evenly combined.

Season the beef mixture with salt and pepper, to taste, and cook until it’s heated through while stirring occasionally. This will only take a few minutes. Remove the skillet from heat and set it aside.

Lay the tortillas out flat on a clean worksurface then sprinkle the shredded cheese evenly out over one half of each tortilla.

Spread 1/4 of the ground beef mixture evenly out overtop the cheese on one tortilla in an even layer. Repeat for the remaining three tortillas until it’s all been used.

Sprinkle another layer of shredded cheese evenly out overtop the ground beef layer on all four tortillas.

Spray a large skillet evenly with nonstick cooking spray and heat it up over medium.

When hot carefully add one of the stuffed tortillas to the center of the skillet and allow it to cook until golden brown and crispy, then flip and continue cooking until the cheese has melted and the other side is also golden brown and crisp.

Be careful when flipping the first time because before the cheese has melted and ‘glued’ all of the filling together and to the tortilla they’re prone to falling out. I find it easiest to hold it together using two wide spatulas during this part.

Transfer the cooked quesadilla to a waiting cutting board to cool, and continue cooking the remaining three quesadillas until all have been cooked and cooled.

Using a pizza cutter, or sharp knife, cut the still warm cheeseburger quesadillas into wedges/triangles.

Serve them while still warm with extra ketchup and mustard on the side for dipping.

Storing

Leftover, or extra, quesadillas can be stored in an airtight container in the refrigerator for up to 3 days.

These can also be made ahead of time for prepped lunches; however, the longer they’re refrigerated the less crispy they will be.

If making them ahead allow them to cool completely before storing and refrigerating.

Tips & Tricks

  • You can use any ground beef lean to fat ratio you prefer, but for best flavor I recommend going with an 80/20. While it may be a fattier beef the grease is going to render out while cooking and should be completely drained off before using in the recipe.
  • Be sure you’re using large burrito-sized flour tortillas in this recipe. Corn tortillas will NOT work, and smaller flour tortillas won’t hold in the ingredients as well when flipping during the cooking process.
  • Prefer more pickle flavor in your burger? Add a couple hamburger dill pickle chip slices to the ground beef layer when assembling your quesadillas.
  • Change things up and give these quesadillas a big mac makeover by serving them with shredded iceberg lettuce on top and our homemade secret sauce for dipping.

Ingredients

  • 1 lb ground beef
  • 1/4 cup diced red onion
  • 3 tbsp ketchup
  • 2 tbsp mustard
  • 1 tbsp dill pickle relish optional
  • 1/2-1 tbsp Worcestershire sauce
  • salt & pepper to taste
  • 4 burrito-sized flour tortillas
  • 2 cups shredded cheddar cheese

Instructions

  • In a large skillet over medium-high, cook the ground beef until completely browned. Drain the beef and then return it to the skillet.

  • Add in the red onion, ketchup, mustard, dill pickled relish, and Worcestershire sauce. Stir the mixture together until evenly combined. Salt and pepper the mixture, to taste, and let it cook just until heated through.
    1/4 cup diced red onion, 3 tbsp ketchup, 2 tbsp mustard, 1 tbsp dill pickle relish, 1/2-1 tbsp Worcestershire sauce, salt & pepper
  • Lay the tortillas out flat. Sprinkle some of the shredded cheese evenly out over one half of each tortilla. Spread 1/4 of the seasoned ground beef overtop of the cheese. Sprinkle another layer of cheese. Fold over the other half of the tortilla to close.
    2 cups shredded cheddar cheese, 4 burrito-sized flour tortillas
  • Spray a large skillet with non-stick spray and heat over medium heat.
  • Carefully transfer one of the filled until golden brown and crispy on one side, then flip and cook until golden brown on the other side.
  • Transfer the cooked quesadilla to a cutting board to cool, and repeat the previous steps until all of them are cooked and cooled.
  • Use a pizza cutter or sharp knife to cut them int wedges before serving.
  • Serve with ketchup and mustard for dipping, and with any other burger toppings you like.
