Strawberry broccoli salad is a sweet creamy side dish that will have everyone eating their veggies happily. Loaded with crunchy broccoli and pecans and dotted with sweet strawberries, it’s an explosion of flavors you’ll love!

My boys are so picky when it comes to eating their veggies.

Well they will willingly eat anything green if it’s dressed up.

And this summer strawberry broccoli salad is dressed up with all sorts of delicious things: creamy, tangy dressing, crunchy pecans, and sweet strawberries.

It’s the perfect way to get them to eat some green with their meals.

And it’s also the perfect side dish for any barbecue, picnic, or potluck.

Ingredients

To make this you’ll need ingredients for the broccoli salad and ingredients for the dressing.

For the salad you’ll need:

  • Broccoli– Chopped, fresh broccoli florets
  • Strawberries– Hulled, chopped fresh strawberries
  • Pecans– Not a fan of pecans? Almond slivers are also amazing in this.
  • Goat cheese– Crumbled. If you aren’t a fan of goat cheese, you could substitute another saltier cheese like Parmesan.

For the dressing you’ll need:

  • Greek yogurt– Make sure you are using plain Greek yogurt and not vanilla or another flavor. 
  • Maple syrup or honey– To taste
  • Lemon juice– Fresh is best
  • Poppy seeds

How to Make

To make this easy strawberry salad, start by combining the broccoli, strawberries, cheese, and pecans in a large mixing bowl.

Then mix the yogurt, maple syrup or honey, and lemon juice together in a small bowl.

Fold the dressing into the broccoli and strawberry mixture until all the fruit and veggies are evenly coated.

Stir in some salt and the poppy seeds.

Refrigerate until ready to serve.

Enjoy!

Can I make this ahead of time?

Yes!

While it’s delicious right away, it tastes even better if you make it a couple hours in advance.

If you’re wanting to plan ahead, and make as much as possible, for a party or meal the following day- prep everything, but store the dressing and salad ingredients separately. 

Mix everything together within 2 hours of your desired serving time.

Storing leftovers

This is one of the few salad recipes where leftovers hold up fairly well.

Store leftovers in an airtight container the fridge for 2 days.

Tips and Tricks

  • Cut the broccoli fairly small and remove the stalks to keep the pieces bite
  • sized.
  • Crumbled feta will work in place of the goat cheese if you’d prefer. Alternatively, you can use walnuts in place of the pecans.
  • This would be really yummy with some craisins, or even dried cherries, folded into the mix as well.
  • If you are allergic to nuts, feel free to omit them all together.

Ingredients

  • 4 cups of fresh chopped broccoli florets
  • 2 cups of chopped fresh strawberries
  • ¼ cup of chopped pecans
  • 1/3 cup of goat cheese crumbled
  • 5 oz plain Greek yogurt
  • 2-4 tsp maple syrup or honey to taste
  • 1 tsp lemon juice
  • salt to taste
  • ½ tbsp poppy seeds

Instructions

  • Combine the broccoli, strawberries, cheese, and pecans in a large mixing bowl.
  • In a small bowl, mix the yogurt, maple syrup or honey, and lemon juice, stirring until everything’s evenly incorporated.
  • Fold the dressing into the broccoli and strawberry mixture until all the fruit and veggies are evenly coated.Add some salt and the poppy seeds and stir them in.
  • Refrigerate until ready to serve. I also like to omit the pecans and instead garnish with slivered almonds.

Notes

    Since I was out of dried fruit, I substituted pepitas for the sunflower seeds, goat feta cheese, shallots for the red onion, and red peppers for sweetness. As raw broccoli is a little difficult for me to digest, I additionally lightly steamed the broccoli till it was crisp and brilliant green. It’s tasty!
