A bright, healthy dish this Tomato Cucumber Feta Salad is refreshing any time of day. Full of fresh garden veggies and tossed in a light Dijon vinaigrette- it’s perfect for guilt-free snacking, packing in back to school lunches, and even works for a light lunch or side dish at supper time.

So, I’m writing this as I watch my husband sleep. Ignore the ugly snores and random reaching out for me since I’m not snuggled up with him, but up talking to you guys.

No, scratch that– I’m not ignoring that last bit, because my husband loves me, and searches for me even in sleep.

So sweet, BUT I promised him I’d go to bed when he did tonight, and then I couldn’t sleep.

So HERE I AM. Cue my guilty conscience. Sort of.

Am I technically in bed? Yup.

Is he sleeping soundly? Yessiree.

Buuuuut, Im still not able to sleep (trust me, I’ve tried) tonight just isn’t my night.

What do you do when you can’t sleep?

Do you go for a late night snack, like I do? Please tell me that you do, and I’m not alone in my snack-aholic-ness.

Come on, you know you want to.

Sadly, I seem to waffle between to opposite extremes. 

–

I’m either firmly entrenched in camp, hot and ready from my microwave- like mozzarella sticks or frozen pizza. 

Or I’m all celery sticks with peanut butter & carrots with some sorta white dippin’ sauce.

Tonight though? I’m calling a big ol’ heck naw on that!

I have a new favorite finger food,  a snack I can feel (somewhat) good about eating as long as I don’t post up with the bowl and a spoon.

Shhhh. It might have happened once or twice, this Tomato Cucumber Feta Salad is just that irresistible.

Ingredients

For The Salad

  • 4 cups peeled, chopped cucumber
  • 3 1/2 cups chopped Roma tomatoes
  • 1 large red onion, chopped
  • 8 oz feta cheese, roughly crumbled

For The Vinaigrette

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 tbsp dried oregano
  • 1/2 tbsp minced garlic
  • 1/2 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp pepper
US Customary - Metric

Instructions

To Make The Salad

  • In a large bowl, add the tomatoes, cucumber, onion, and feta. Toss until they're all evenly mixed up together.

To Make The Dijon Vinaigrette

  • In a small bowl, whisk together all of the ingredients until evenly incorporated and smooth.
  • Pour the dressing evenly out over the salad. Toss well to combine. Serve right away, or refrigerate and serve when chilled.
