Sugar Cookie Ice Cream Sandwiches
Sugar cookie ice cream sandwiches are the ice cream shop style dessert recipe you need to make when the craving for heading out for a summer treat hits. Perfectly baked sugar cookies hold a thick layer of Butterfinger coated, slow churned vanilla ice cream for the ultimate indulgence.

Do you love a good ice cream sandwich but want something a little different than the standard Chipwich and you don’t want to head out to the ice cream store?
Then these sugar cookie ice cream sandwiches are for you!
Use your favorite recipe to bake a fresh batch of sugar cookies or use the slice and bake roll from the grocery store.

Sandwich a generous scoop of vanilla between two cookies and then roll the edges in crushed up bits of the candy.
We’re talking an ice cream lover’s dream come true right here.
You’ll want to make an extra big batch so you have them on hand whenever the mood for a little sweet treat strikes!
Ingredients
To make these you’ll need:

- Crushed candy bars– I used crushed Butterfinger because that’s my favorite but you could do this with crushed Snickers or Reese’s cups. Mini m&m’s, sprinkles, or miniature chocolate chips are also great choices!
- Ice cream– I used my favorite brand of vanilla ice cream but you can use your favorite brand of any flavor you’d like. Let it soften slightly.
- Sugar cookies– Use your favorite sugar cookie recipes, bake up some slice and bakes, or get some store bought sugar cookies.
How to Make
Making these sugar cookie ice cream sandwiches is so easy!
Just stir together half a cup of the crushed candy and ice cream in a medium bowl until everything is combined.

Scoop the ice cream mixture out onto four sugar cookies with the flat bottom of the cookie turned face up.

Close the sandwiches by topping the ice cream with the additional four cookies, pressing the top cookies down slightly so that the ice cream reaches the edges of the cookies.

Pour the other half cup of crushed candies onto a flat plate and roll the edges of each ice cream sandwich edges into the candy pieces to coat the sides.

Either enjoy them immediately or put the sandwiches in a shallow dish and return to the freezer until re-frozen.

Storing
If you make a double batch or just won’t eat all of the first batch in one sitting, you can absolutely store them for later.
To do that, put any extra sandwiches in a shallow, freezer safe dish and freeze them for about 4 hours to let them firm back up.
Then transfer them to a ziplocking freezer bag.
The ice cream sandwiches will keep for about 3 months.

- Other yummy flavor combinations include peanut butter ripple or chocolate peanut butter with crushed Reese cups or whole Reese’s Pieces, cookies and cream with crushed Oreo coating, and Moose Tracks with crushed Snickers.
- Let cookies cool completely prior and the ice cream soften slightly prior to building the ice cream sandwiches.
