Quick & Easy Strawberry Sauce

We always pick strawberries in the summer.
Some of them we grown in our own garden, but we also head to our local pick your own.
And boy do we end up being up to our ears in the sun ripened berries.
Sure, we eat them fresh by the handfuls, but we just can’t eat em fast enough.
This easy strawberry sauce makes great use of all those fresh berries so we can enjoy that summer sweetness for months to come.
Ingredients
To make this yummy strawberry topping, you need:
- Strawberries– Washed, hulled, and diced.
- Sugar– Granulated
- Lemon juice- Preferably fresh.
- Vanilla extract– This is optional.
How to Make
To make this, just add all of the ingredients to a large, flat skillet.
Stir them together to evenly combine and bring the mixture to a boil over high heat.
As soon as it boils, reduce the heat to low- and whisk the mixture well to prevent burning.
Let it simmer for 15 minutes, or until the volume is reduced by half.
Remove the skillet from heat, and allow the sauce to rest.
It will continue to thicken as it cools.
Serve or store, and enjoy!

To store, let it cool completely and then transfer to an airtight container.
Refrigerate and use within 4 days.
Can I can strawberry sauce?
Yes!
For longer storage, pour the still piping hot strawberry sauce into canning jars, add a seal, and then a lid tightening to close.
Let the jars sit until completely cool.
They can then safely be refrigerated for up to 3 months.
Once opened, use within 3 days.
Can I freeze this?
Yes!
To freeze, cool it and store it in a freezer bag for 3 to 6 months.
Just thaw it in the fridge prior to use.
