Pineapple upside down pancakes take all the yummy flavors of this decadent cake and put them in French pancake form. Pineapple upside down pancakes will turn any breakfast or brunch into something special and satisfy any sweet tooth.

It’s sweet and full of delicious goodness from brown sugar caramelized pineapples. And now it’s not just for dessert!

With these pancakes now you don’t have to wait until dessert to enjoy the fantastic flavor combination of caramelized pineapples, maraschino cherries, and cake.  

Pineapple Upside Down Pancakes – The Perfect Way to Jazz up Brunch

Sometimes I get bored with basics for breakfast and brunch especially for special occasions like Easter or Mother’s Day.

I don’t want to make just plain old pancakes or waffles. I want something that feels special without a ton of extra work like strawberry shortcake pancakes.

These pineapple upside down pancakes are just that- special feeling but ready in under 30 minutes.

What are French Style Pancakes?

Plus these pancakes feel extra special because instead of being traditional pancakes that rely on a leavening ingredient for lift, these are French style.

French style pancakes are very close to crepes, just a little bit thicker. Because there’s no leavening ingredient like baking powder, they are thin instead of fluffy and just a touch crispy on the edges.

The result is so tasty and fancy feeling you’ll hardly be able to believe just how easy it is to make them!

Making Delicious Pineapple Pancakes

Making the yummiest pineapple upside down pancakes isn’t much different than making regular pancakes.

Start by beating your eggs until they are light and fluffy. In a separate bowl, beat room temperature butter until it has lightened and also gotten fluffy.

Add the beaten eggs to the butter. Then mix in the sifted flour and sugar until just combined. Next, pour the milk into the batter and beat until smooth.

Now it’s time to make the pancakes themselves. To make them on the stove top, heat a skillet over medium heat.

When it is hot, pour 3/4 a cup of batter into the skillet. Add one pineapple slice and one cherry on top of the batter. Then sprinkle the pancake with brown sugar.

Flip the pancake after about 2 minutes on one side and cook on the second side for another 60 seconds.

Then take the pancake off the heat and place on an oven proof cake or baking tray in warm oven until you are done making the rest of the pancakes. This step will keep them warm and moist until all the pancakes have been made.

Don’t Love Flipping Pancakes? Bake Them in the Oven!

If you’d rather save yourself some time spent at the stove flipping pancakes, you can make this recipe in the oven instead.

To bake this pineapple upside down pancake, you can butter an oven proof plate and pour the batter onto the plate and bake in a hot oven for about 20 minutes at 325.

Then serve them and enjoy!

Ingredients

  • 2 Eggs
  • 2 oz. of Sifted Sugar
  • 2 oz. of sifted Flour
  • 1/2 a pint of Milk
  • Pineapple Slices/Rings
  • Maraschino cherries
  • Brown Sugar
  • 2 oz butter

Instructions

  • Start by beating your eggs.
  • Beat your butter until creamy and add in eggs.
  • Add in sugar and flour, and mix well.
  • Add in milk, and mix until smooth.
  • Pour 3/4 of a cup of pancake batter on your skillet or buttered plate.
  • Add one pineapple slice and one cherry to the top of batter as shown.
  • Sprinkle with brown sugar.
  • You can make them on the stove top in a greased skillet, or bake in a 325 oven for 20 minutes on a buttered plate.
  • If using a skillet flip after about 2 minutes.
  • Serve and enjoy!
