Strawberry Shortcake Pancakes

Strawberry shortcake pancakes put classic strawberry shortcake flavors into a delightful pancake recipe. These fluffy pancakes will delight everyone at your breakfast table with their easy and sweet strawberry topping.

I like to make breakfast fun and a little special every now and then.

Of course, I can’t let breakfast get too complicated because my boys are going in so many different directions every day.

So I try to find ways to make a simple breakfast like pancakes more fun, like with these banana pancakes with peanut butter syrup or even these red velvet pancakes with cream cheese glaze.

That’s where these new strawberry shortcake pancakes come in.

Ingredients Needed

The recipe for these strawberry flavored pancakes is pretty simple and easy.

It has all the usual pancake ingredients: flour, milk, eggs, oil, and baking powder.

However, in addition to the normal pancake ingredients, I’ve added a quarter cup of sugar.

Some pancake recipes only call for a tablespoon or so of sugar.

I wanted to sweeten these pancakes up a bit more to make them a bit more similar to the cake base of the classic strawberry shortcake dessert.

And that quarter cup of sugar does the trick.

The resulting pancakes are perfectly sweet without being overpoweringly so.

Plus, the added sugar gives these pancakes a fantastically fluffy texture.

We’re talking pancake pillows here- in the best possible way.

How To Make

To make the pancakes, whisk the flour, sugar, baking powder, and salt together in a large bowl.

Then gently whisk in the eggs, milk, and oil.

You want to whisk the batter until it is just combined. If you over mix, you risk tough pancakes.

When the batter is made, spray a skillet with nonstick spray and heat the skillet until hot.

Ladle on some batter and cook the first pancake until bubbles start to form on the top of the pancake.

Then flip it over and cook until cooked through.

After this first pancake, you may need to turn the heat down on the skillet slightly and repeat.

Once you’ve made all the pancakes, it’s time to serve them up and this is where the strawberry shortcake part of the recipe really comes in.

Top each stack of fluffy pancakes with strawberry ice cream topping and diced strawberries.

And if you really want to treat your family, serve these strawberry shortcake pancakes with a big scoop of strawberry ice cream and a dollop of whipped cream.

Ingredients

  • 2 and 1/3 cup of Flour
  • 1/4 cup of Sugar
  • 2 tablespoons of Baking Powder
  • 1 and 1/2 teaspoons of Salt
  • 1/3 cup of Vegetable Oil
  • 2 Eggs
  • 2 and 1/2 cups of Milk
  • Strawberries diced
  • Strawberry Ice Cream Topping heated up

Instructions

  • Start by combining flour, sugar, baking powder and salt into a large mixing bowl.
  • Add in oil, eggs, and milk.
  • Blended until smooth.
  • Heat of a skillet and spray with nonstick cooking spray.
  • Pour batter into skillet, desired size of pancake.
  • Cook until top begins to bubble, and then flip your pancake.
  • Cook other side of pancake evenly.
  • Top pancake with diced strawberries, ice cream topping, and whipped topping.
  • Serve and enjoy.
