Crispy Air Fryer Potato Wedges

Crispy air fryer potato wedges are a delicious side dish for anything that pairs well with thick french fries or roasted potatoes. With a crisp, crunchy exterior and a pillowy interior, this recipe creates a restaurant style wedge right at home.

I have big opinions on potatoes and potato products.

For example, french fries.

The thicker the cut of fry, the better.

I mean, don’t get me wrong, shoestring fries do in a pinch, but what I really want is potato wedges.

Crispy on the outside, perfectly seasoned, fluffy and creamy on the inside.

They are far superior to other fries.

And with my easy recipe you can make them right at home in your air fryer any time!

Ingredients

To make these you’ll need:

  • Potatoes– Russet potatoes, soaked, washed, and scrubbed.
  • Olive oil– Or another light oil.
  • Spices– Smoked paprika, garlic powder, cayenne pepper (optional), salt and pepper

You’ll also need a basket air fryer. We like this one.

How to Make

With only a few ingredients, these potato wedges are so easy to make!

Start by cutting your potatoes into wedges.

Once you have them into wedges, add them to a large mixing bowl.

Add cold water to the bowl, just until the potatoes are covered.

Then add 2 cups of ice to the bowl, and let the potatoes soak in the ice water for 30 minutes.

After 30 minutes, drain the potatoes and pat them completely dry with paper towels.

Once you’ve dried the potatoes, transfer them to a large, dry mixing bowl.

Then, drizzle the olive oil evenly out over them, tossing them to coat.

Sprinkle the seasonings out over the potatoes toss them again just until evenly coated.

Spray the basket of a large air fryer with nonstick cooking spray.

Put the potatoes in the basket in a single layer, being careful not to overcrowd them. 

Air fry the potato wedges at 400° for 15-20 minutes, shaking the basket halfway through.

Serve the crisped potato wedges warm with your favorite dipping options.

You can never go wrong with the standard ketchup or even barbecue sauce, but these are fun to dress up with your favorite sauces.

How to Cut Potatoes into Wedges

To make potato wedges, you want to leave the skin on and wash the potatoes well.

Then pat them dry.

Cutting potatoes into wedges is basically cutting them into eighths.

To do it, use a sharp knife and cut the potato in half lengthwise.

Then, put the cut side of the potato down on the cutting board and cut it in half lengthwise again.

Cut each thick wedge in half again and you’re ready.

How to Get Crispy Potato Wedges

Don’t skip the ice bath!

The secret to getting the crispiest results when baking or roasting potatoes is in soaking them in an ice water bath beforehand.

The cold soak pulls some of the starch out from the center of the potato, which yields crispier, sturdier wedges.

Storing Leftovers

These are best when they are freshly made.

However, if you have leftovers, transfer them to a freezer bag and freeze the cooled wedges.

Reheat them in the air fryer until warmed through.

Tips and Tricks

  • Depending on the size of your air fryer basket, you may need to cook in two batches. You want a single layer and no overlapping fries.
  • We like to serve our potato wedges with a sprinkle of parmesan cheese, dried parsley, and dried oregano.
  • If you don’t want the wedges to have a kick at all, omit the cayenne.
