I love having fun with food and one of my favorite ways to play with my food is to serve one thing that looks like another.

Take spaghetti eis. 

No that is not a typo of “Spaghetti-o’s.”

It is a funny- but delicious- dessert that looks just like a big old plate of spaghetti.

What is spaghetti eis?

Spaghetti eis is sometimes called spaghetti ice cream.

It is a German treat that looks just like a plate of spaghetti.

In the dessert, you push vanilla ice cream through a press or a potato ricer so it winds up looking just like noodles.

What are the main ingredients in Spaghetti eis?

To make this you’ll need:

  • Heavy cream– Don’t substitute a lower fat cream.
  • Sugar– Powdered and granulated
  • Strawberries– Fresh strawberries, hulled and sliced
  • Ice cream– Your favorite brand of vanilla
  • White chocolate– To grate for decoration
  • Mint– Optional for garnish

How to Make

To make spaghetti ice cream, start by beating the heavy cream and powdered sugar together until soft peaks form.

Once soft peaks form, refrigerate the mixture until you are ready to use it.

Then make the strawberry sauce by adding the strawberries and granulated sugar to a medium sauce pan over medium heat.

You may need to add a tablespoon or two to the sauce pan to start the strawberries cooking.

Cook the berries for 8 to 10 minutes or until they are soft and bubbly.

Then mash the strawberry sauce until it reaches your desired consistency and chill it in the fridge for at least 20 minutes.

When the sauce is cool, you can start plating your spaghetti eis.

First add a generous dollop of whipped cream to a plate.

Then, use a potato ricer to squish some ice cream onto the whipped cream.

I recommend a sturdy metal ricer, because it’s easier to handle and won’t give you any trouble.

However, if you make sure to soften the ice cream first, you should be able to use any kind you have without issue.

Top it with strawberry sauce and grated white chocolate.

Garnish with mint if desired and serve immediately.

Tips and Tricks

  • You can substitute shredded coconut for grated white chocolate to look like Parmesan cheese.
  • Keep all the elements to this dessert as cold as possible before assembly. I even recommend putting the serving plate in the freezer before use.
  • To get the strawberry sauce to be the right consistency you may need to add a tablespoon or so of water during the cooking process.
  • Mash the strawberries with a rubber spatula, immersion blender, or even a food processor.

Ingredients

  • ½ cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 cup sliced fresh strawberries
  • 3 tablespoons sugar
  • 2-3 cups vanilla ice cream
  • White chocolate for grating
  • Mint for garnish optional

Instructions

  • Beat the heavy cream and powdered sugar until soft peaks form, set aside in fridge until needed
  • Add the strawberries and sugar to a medium saucepan and heat, stirring frequently, over medium heat 8-10 minutes, or until strawberries are bubbly and soft
  • Mash strawberry sauce until desired consistency is reached, then allow to chill in fridge at least 20 minutes
  • Place a generous dollop of whipped cream on a plate, the use a potato ricer to squish the ice cream out on top
  • Add the strawberry sauce and grate some white chocolate on top to finish
  • Garnish with mint if desired and serve immediately

Notes
