  • Diced tomatoes– A 14.5 ounce undrained can.
  • Chicken broth– You can substitute veggie broth or chicken stock.
  • Salt and pepper– To taste.

How to Make

Southern tomatoes and rice is one of the easiest side dishes you could make!

Just melt the butter in a large skillet set over medium heat.

Once the butter melts, add the onion and cook it until softened or about 3 to 4 minutes, stirring occasionally.

Then stir the rice into the skillet to lightly toast it.

Ingredients

  • 2 tbsp butter
  • 1/2 cup finely diced yellow onion
  • 1 cup long grain white rice
  • 1 14.5 oz can diced tomatoes undrained
  • 2 cups chicken broth
  • salt & pepper to taste

Instructions

  • Add the butter to a large skillet set over medium heat. Add the onion, stir to coat, and cook until softened- about 3-4 minutes. Stir occasionally.

  • Add the rice to the skillet and stir everything together until evenly combined. Cook, stirring often for 1-2 minutes- just until lightly toasted.

  • Stir in the tomato and broth, then season with salt and pepper. Bring the mixture to a low boil, then reduce the heat to low.
