English Muffin Pizzas

English muffin pizzas are a kid friendly lunch or after school snack you can make anytime. These toasted English muffins feature your favorite pizza toppings and are ready in under 30 minutes!

Being a boy mom means I wear several hats: chaos coordinator, driver, referee, but most importantly the keeper of the snacks.

Boys are always hungry.

And I do mean always.

And my boys love a good pizza flavored snack or lunch.

So English muffin pizzas make frequent appearances on our table.

The boys love them because they are delicious with all the cheesy pizza toppings.

I love them because they are quick and easy.

It’s a win-win for everyone.

Ingredients

To make these you’ll need:

  • English muffins– Your favorite brand, and both regular and whole wheat varieties will work in this recipe.
  • Olive oil– You could substitute butter if you prefer.
  • Pizza sauce– Your favorite brand
  • Cheese– Shredded mozzarella
  • Pepperoni– Slices. Not into pepperoni? Use your favorite pizza topping instead.
  • Basil leaves– Freshly sliced. I like to chiffonade mine, but if you aren’t feeling fancy just give them a rough chop- you could even tear them apart with your hands.

How to Make

To make these English muffin pizzas, start by gently splitting the muffins and separating the halves.

Arrange them cut side up on a parchment paper lined baking sheet.

Drizzle the olive oil evenly out overtop of the muffins.

Bake the English muffins at 400° for 3-4 minutes, just until lightly toasted and barely golden brown.

Once the English muffins are lightly golden, spoon the pizza sauce evenly between all of the toasted muffins.

Make sure to spread the sauce out evenly over top of each muffin.

Then sprinkle the cheese evenly out over all of the mini pizzas and top each with two pepperonis.

Bake the pizzas for 10 minutes or just until the cheese has evenly melted and the edges are nice and browned.

Let rest for 1-2 minutes before topping with shredded basil.

Serve warm and enjoy!

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to a week.

Can I freeze English muffin pizzas?

Yes! 

I often make a double batch and freeze half for later.

To do it, toast the English muffins as instructed above.

Then assemble the pizzas but do not bake them.

Instead, transfer the baking sheet to the freezer and let them chill for 2 hours.

Once they are  frozen, put them in a freezer safe air tight container or ziplocking bag.

You can freeze them for up to 3 months.

When you’re ready to enjoy the pizzas, bake them at 400F for 10-12 minutes or just until cheese has melted and they’re nicely toasted.

Tips and Tricks

  • Don’t skip toasting the muffins first! Toasting the muffins before adding the toppings is key to ensuring a crispy crust that doesn’t turn soggy.
  • Top with whatever you typically enjoy on your pizza- you can keep it as simple (or make it as indulgent) as you like.
  • Use alfredo sauce for ‘white’ pizzas, or even our homemade basil pesto as the sauce.
  • Serve with extra pizza sauce for dipping.

Ingredients

  • 4 English muffins
  • 1 tbsp extra virgin olive oil
  • 1 cup pizza sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 16 slices pepperoni
  • freshly sliced basil leaves for garnish
