Buffalo Chicken Meatballs with Blue Cheese Sauce

Some events just require you to have buffalo chicken.

It’s like a law or something.

Ok, well it should be anyway.

With football season and tailgating in full swing, my mind is on all things smothered in hot sauce.

Like these yummy buffalo chicken meatballs!

They are the perfect alternative to wings, packing the same big flavor.

But they offer so much more variety with how you can eat them- as is, in a bun for sandwiches, with pasta…. the sky is the limit!

Ingredients

To make this spicy dish you’ll need two sets of ingredients. The first set is for the meatballs themselves, the second set is for the sauce.

For the meatballs, you need:

  • Chicken– Go for ground chicken and choose any kind you like. 
  • Egg– Acts as binder for the meatballs.
  • Flour– All purpose is best.
  • Hot Sauce– Use your favorite brand. We prefer Frank’s.
  • Seasonings– Chopped green onions and garlic powder

For the blue cheese sauce you’ll need:

  • Blue Cheese– Either crumble your own or use pre crumbled blue cheese.
  • Buttermilk– Don’t have any? Add a tablespoon of vinegar or lemon juice to a cup of milk.
  • Sour Cream– Full fat is best!
  • Seasonings– Fresh garlic, lemon juice, Worcestershire sauce, mustard powder, salt and pepper

How to Make

Start by heating the oven to 400 degrees.

While the oven heats, make the blue cheese sauce.

To do this combine the blue cheese, buttermilk, sour cream, garlic, lemon juice, Worcestershire sauce, black pepper, mustard powder, and salt in a medium bowl until combined.

Then pop the sauce in the fridge for about 30 minutes to allow the flavors to come together.

While the sauce is getting happy, combine the ground chicken, egg, flour, 1/3 cup of the hot sauce, green onion, and garlic powder in a large mixing bowl.

Then roll the mixture into 1 ½ -inch balls and place on a baking sheet.

Bake the meatballs for 15-18 minutes, remove from the oven and allow to rest for about 10 minutes

Then, toss the meatballs in the remaining hot sauce

Drizzle the blue cheese sauce over the chicken meatballs or serve in small side dishes to dip in

Storing Leftovers

To store, I highly recommend keeping the meatballs and sauce separately.

For the buffalo chicken meatballs, place them in an airtight container in the fridge for up to 4 days. You can reheat them on a baking sheet in the oven for best results.

You can store the blue cheese sauce in an airtight container in the fridge for 5-7 days.

Can I eat these warm or cold?

Buffalo Chicken Meatballs are best served warm. The Blue Cheese sauce does need to be kept refrigerated due to the dairy products.

  • as is for an appetizer
  • on buns or rolls topped with cheddar cheese for a hearty sandwich
  • on slider buns as another app idea

  • Don’t be afraid to use your hands to mix the meatballs.
  • Want to add a surprise to the middle? Stuff a small cube of cheddar cheese inside the meatballs before baking.
  • Vary your hot sauce flavor to create tons of different meatball varieties.

Ingredients

For the Chicken Meatballs:

  • 2- pounds ground chicken
  • 2 eggs
