Thanksgiving Leftover Sandwiches with Cranberry Mayo

We always have enough food to feed an army leftover after the holidays.
Especially after Thanksgiving.
I always have a mountain of turkey and stuffing left.
And it is a shame to let it go to waste.
So Thanksgiving leftover sandwiches it is!
We’re talking tender turkey, savory leftover stuffing, fluffy brioche buns, and a tangy cranberry mayo.
So good!
Ingredients
To make these turkey and stuffing sandwiches you need:
- Leftover turkey– Slice it up and warm it.
- Stuffing– Warm it up.
- Brioche buns– Sliced in half and toasted.
- Butter – Optional, but highly recommended for toasting up golden delicious sandwich buns.
- Cheese – Shredded white cheddar cheese, for melting onto the buns while they toast. A chef’s kiss pairing with the cranberry mayo and other sandwich ingredients.
- Mayonnaise– Do not substitute Miracle Whip. And make sure you use a quality mayonnaise like Hellman’s or Dukes.
- Cranberry sauce– Either store bought or homemade. Whatever you have left.
- Half and half– To thin the cranberry mayo, but only if needed.
How to Make
This sandwich is just the thing to make to use up your leftovers from a day spent in the kitchen. It needs virtually no work!
To make it, warm up your leftover turkey and stuffing.
While they’re heating toast your sliced brioche buns.
Add them all to a sheet pan, insides up.
We like to spread some butter on the insides, and sprinkle shredded white cheddar over before toasting them. It’s a little something extra that really takes the whole sandwich a step above.
Then bake them in the oven just until golden brown and toasty and the cheese has melted.
Remove from the oven & set aside.
Then make the cranberry mayonnaise by whisking the cranberry sauce and mayo together in a small bowl until evenly combined.
If the sauce is too think for your liking, stir in a teaspoon or two of half and half.
Set the mayo aside.
Then, layer the warm turkey slices on the bottoms of your brioche buns and top the turkey with a generous serving of warm stuffing.
Spread cranberry mayo on the bottom of the top bun, then add it to close the sandwiches.
Serve and enjoy!

Can I Save Leftover Cranberry Mayo Sauce?
As written the recipe only makes two sandwiches, although it’s easy to double or triple the amount as needed.
If you have extra cranberry mayo, store it in an airtight container.
Refrigerate and use within 3 days.
Tips and Tricks
- I prefer my sandwiches without mashed potatoes and gravy, but my kids swear by a layer of mashed potatoes and also a schmear of gravy on the bottom bun.
- DO NOT substitute miracle whip for mayo. Also use a quality mayo that you like since it’s the base of your sandwich’s sauce.
- Want to add a little green and crunch? Top the sandwiches with a couple romaine or bibb lettuce leaves.

Thanksgiving Leftover Sandwiches with Cranberry Mayonnaise
Ingredients
For The Sandwiches
- 1 1/2 cups sliced leftover turkey warmed
- 1 cup leftover stuffing warmed
- 2 brioche buns
- 2 tbsp butter softened
- 1/2 cup shredded white cheddar cheese
For The Cranberry Mayonnaise
- 1/2 cup mayonnaise
- 1/3 cup cranberry sauce
- 1-2 tsp half & half if needed, to thin the mayo
Instructions
- Warm up your leftover turkey and stuffing.
- While they're heating add your sliced buns, insides up, to a rimmed baking sheet. Spread softened butter evenly between all 4 slices. Then divide the cheese and sprinkle out evenly. Toast in oven, until golden brown & cheese has melted. Remove from oven and set aside.
- Add mayo and cranberry sauce to a small mixing bowl- whisk together until evenly combined. If the sauce is too think for your liking, stir in a teaspoon or two of half and half until evenly incorporated. Set aside.
- Layer warm turkey slices on the bottoms of your brioche buns, then top with a generous serving of warm stuffing.
- Spread cranberry mayo on the bottom of the top bun, then add it to close the sandwiches.
- Serve and enjoy!
