Strawberry Pie Filling
Homemade strawberry pie filling is easier than you’d think to make! With just 5 ingredients and a quick prep, you’ll be on your way to a delicious sweet strawberry pie in no time at all.
Strawberries and summer desserts are such a natural pairing.
After all strawberries are best this time of year and the grocery store and farmer’s market are both overflowing with an abundance of sweet berries.
One of my favorite strawberry desserts has to be strawberry pie!
Especially when you make your own homemade strawberry pie filling.
There’s no need to use the canned stuff and you will love how delicious and easy this is to make!
Ingredients
To make this you’ll need:
- Strawberries– Fresh not frozen strawberries. Wash them and remove the stems.
- Sugar– Granulated
- Water– Boiling
- Cornstarch– To thicken the pie filling
- Vanilla extract– Real vanilla extract tastes the best.
How to Make
Homemade strawberry pie filling is pretty easy to make!
Just puree 1 1/2 cups of the strawberries in a food processor fitted with the blade attachment.
When the strawberries are pureed, blend in the sugar, boiling water, and cornstarch until smooth.
Carefully pour the mixture into a large sauce pan and bring to a boil over medium heat, whisking constantly.
Let it boil for three minutes exactly.
After it has boiled for three minutes, remove the skillet from heat immediately and whisk in the extract.
Set the mixture aside while you quarter the remaining berries.
Fold the quartered berries into the mixture with a spatula.
Use immediately in a pie or transfer to clean glass jars, seal, and refrigerate until ready to use.
Stir before using.
Enjoy!
Storing Leftover Pie Filling
If using this strawberry pie filling in a pie crust, you will need to refrigerate it in an airtight container and eat it within a week.
Can I freeze strawberry pie filling?
Unfortunately this does not freeze well, but you can jar any leftovers and refrigerate them.
Why is my strawberry pie filling runny?
You need to use the amount of cornstarch this recipe calls for.
Don’t worry if it seems thin right after you remove it from the heat.
The strawberry pie filling will thicken as it cool.
How much strawberry pie filling does this make?
This recipe will yield about 6 cups of pie filling, which will be enough for one pie.
Tips and Tricks
- Don’t worry! The mixture will come to a boil over medium heat.
- The mixture may appear cloudy while it boils, but it will become clear as it cools.
- If the berries you are using are on the smaller side, you can halve them instead of quartering them.
- Do NOT use frozen strawberries in this recipe.
