How to Make
Southern tomatoes and rice is one of the easiest side dishes you could make!
Just melt the butter in a large skillet set over medium heat.
Once the butter melts, add the onion and cook it until softened or about 3 to 4 minutes, stirring occasionally.
Then stir the rice into the skillet to lightly toast it.
After about 1 to 2 minutes, stir in the tomato and broth and season it with salt and pepper.

Bring the mixture to a low boil.
Once it boils, turn the heat down to low.
Cover the skillet and let it simmer, stirring occasionally, for 15 to 20 minutes or just until the rice is tender and has absorbed most of the liquid.
Remove the skillet from heat and let it sit, covered, for 5 minutes.
Fluff the rice, serve warm, and enjoy!

Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days.
Reheat it in the microwave, adding more broth if needed.

Tips and Tricks
- Stir the onion while you are sautéing it to keep it from burning.
- Do not drain the canned tomatoes. You want all the juices to go into the skillet.
- Make sure to stir the rice every so often so it doesn’t stick to the bottom of the skillet.
