Smoked Egg Salad

Smoked egg salad puts a barbecue spin on the classic sandwich filling. This recipe creates a creamy salad with a smoky flavor and hint of barbecue and spice.

We love egg salad in sandwiches, wraps, and on green salads.

It’s a great source of protein and fat so it keeps my hungry boys feeling full and satisfied.

But sometimes my boys want it to feel a little less delicate.

It did originate as a filling for an English tea sandwich after all.

Smoked egg salad does just that.

It keeps the creaminess you know and love but infuses smokiness and barbecue spice into each and every bite.

How do smoked eggs taste?

It depends on how long you smoke them.

This recipe uses eggs that only spend a few minutes in the smoker so the result is a lightly smoky flavor.

Ingredients

To make this you’ll need:

  • Hard boiled eggs– Hard boil them using your preferred method and peel them once they are cool enough.
  • Mayonnaise– Real full fat mayo and not Miracle Whip or mayonnaise style dressing.
  • Green onions– Finely sliced
  • Mustard– Use the country Dijon variety. 
  • Barbecue rub– Your favorite blend.
  • Hot sauce– Feel free to adjust the amount up or down to suit your tastes.
  • Salt and pepper– To taste

How to Make 

Making smoked egg salad is very similar to making the classic version except you smoke the eggs first and a dash of barbecue spices.

To do it, smoke the eggs at 225° in a disposable aluminum pan for 10-15 minutes or until the eggs are golden brown and smoke scented.

Once the eggs are golden, carefully remove the hot pan from the smoker and let the eggs rest until they’re cool.

Then, mash the eggs in a mixing bowl with a potato masher.

Stir in the remaining ingredients except for the salt and pepper until they are evenly combined.

Give it a taste and season the mixture with salt and pepper to your preference.

What wood chips should I use to smoke eggs?

Eggs don’t need a long time in the smoker so you can use a bolder wood like hickory or mesquite.

Do I need to cook eggs before I smoke them?

While you can smoke uncooked eggs, cooking them during the smoking process, using eggs you’ve already hardboiled is faster and tastes the same.

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 3 days.

Serving Suggestions

We like to spread this on toast or use it in wraps.

It’s also delicious spread on celery sticks or cucumber slices if you are watching your carbs and as a dip for crackers if you’re not carb conscious.

  • We like to make air fryer hard boiled eggs, which yields consistent results and easy to peel eggs.
  • Hate peeling hard boiled eggs? You could also buy shelled hard boiled eggs, if that’s easier.
  • When I use all 14 eggs, I typically add an extra tablespoon of mayo and an extra heaping teaspoon of mustard.

Ingredients

  • 12-14 hardboiled eggs
  • 1/3 cup mayonnaise
  • 3 green onions very finely sliced
  • 1 heaping tbsp country Dijon mustard
  • 1/2 tsp barbecue rub
  • 1/2 tsp hot sauce
  • salt & pepper to taste

Instructions

  • Add the eggs to a disposable aluminum pan. Then smoke them at 225° for 10-15 minutes, until the eggs are golden brown and smoke scented.

  • Carefully remove the hot pan from the smoker, and let the eggs rest until they're cool to the touch.
  • Transfer the eggs to a mixing bowl, then use a potato masher (or fork) to mash them. Mash them well, unless you like larger chunks.
  • Add the remaining ingredients, EXCEPT the salt & pepper, to the bowl. Stir together until evenly combined.
    1/3 cup mayonnaise, 3 green onions, 1 heaping tbsp country Dijon mustard, 1/2 tsp barbecue rub, 1/2 tsp hot sauce
  • Season the mixture with salt & pepper, to taste.
