Slow Cooker Ground Beef Tacos

Taco night just got a whole lot easier with these slow cooker ground beef tacos. No need to stand over a pan to brown your meat, just throw your ingredients in the slow cooker and go about your life. Then come dinner time you can enjoy delicious saucy ground beef tacos that you won’t be able to get enough of.

Guys. Life is hard. Especially when back to school season hits. And, gulp, it’s practically here.

Just another few short weeks and long days spent outside swimming and playing in the sunshine become days racing around to sports practice and back to school night.

Are you ready for it? I don’t know if I am just yet. As much as I love the fall, I can wait for the hustle and bustle that it brings with it.

But just because life is hard, especially come back to school season, doesn’t mean dinner has to be.

In fact, these slow cooker ground beef tacos are anything but hard. Prep takes about two minutes. And then you just turn your slow cooker on and let it do its magic.

CAN YOU REALLY MAKE GROUND BEEF TACO MEAT IN THE SLOW COOKER?

I was skeptical too. Wouldn’t ground beef beef sort of off if you cooked it in a slow cooker? I thought perhaps it would be too soft or not brown up nicely. But you know what? I am happy to report I was seriously wrong.

I will admit, however, the beef cooks up a bit saucier than ground beef that you would brown for tacos on the stove top. Personally, though, I am ok with that.

The saucy taco meat took the tacos over the top. Plus, this slow cooker beef would also be amazing spooned over nachos because it would create that beautiful sauce situation all good nachos need.  

DO I HAVE TO COOK THE BEEF FIRST?

You don’t need to cook the beef before you put it in the slow cooker. In fact, this taco meat is the slow cooker version of a dump cake.

You add the uncooked meat to a slow cooker then sprinkle on the seasonings evenly. After you season the meat, pour on the salsa. Then you put the cover on your slow cooker and cook for 6 hours on low or 3 hours on high.

Before you serve it, strain the meat to get rid of any extra grease and then return it to the slow cooker and break the beef up a bit more. Then add it to your taco shells or spoon it over a taco salad or nachos and dinner is done.

MAKE THIS SLOW COOKER TACO BEEF A FULL MEAL!

With a family full of big eaters and growing boys, I like to serve a few side dishes on taco night. To keep with the theme, I often make up this Mexican street corn salad and a side of easy Mexican rice.

And the next day, you can use the leftover rice and beef to make lunchtime burritos!

Ingredients

  • 2 lbs lean ground beef
  • 1 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 - 1/3 cup taco seasoning
  • 2 cups salsa

Instructions

  • Add the ground beef to the bowl of your slow cooker.
  • Sprinkle the spices & seasoning evenly out over top of the meat. Cover Pour on the salsa on top of the seasoned meat. Then cover and cook the taco meat on low for 6 hours, or high for 3 hours.
  • Stir the meat mixture, then strain to remove any excess grease. Return the beef to the pot, then stir to break up the meat into smaller pieces.
  • Scoop into taco shells (hard or soft) and top with your desired toppings. Serve immediately.
