This sausage egg and cheese pancake sandwich recipe is a quick, hearty breakfast that brings together all the best sweet and savory morning flavors in one easy, handheld meal. So being a boy mom, I try to come up with ways to keep my boys fed and happy first thing in the morning.
I have a few requirements for their morning meal.
Breakfast needs to be filling, dependable, and most importantly easy enough to make before the coffee fully kicks in.
Mornings are hectic enough without complicated recipes slowing things down.
That’s exactly why these sausage egg and cheese pancake sandwiches stay on repeat in our house.

They check every box with fluffy pancakes, savory sausage, soft scrambled eggs, and melty cheese all stacked together into one seriously satisfying breakfast.
Plus they are full of simple ingredients like frozen pancakes and eggs, making them perfect for busy mornings and freezer meals but fun enough for weekend breakfasts.
With all those boxes checked, its not hard to see why these sausage egg and cheese sandwiches with pancakes are in our regular rotation.

Ingredients
To make this you’ll need:
- Frozen pancakes– Use your favorite prepared frozen pancakes, cooked according to package directions or you could use leftover homemade pancakes. I recommend using buttermilk and avoiding varieties like chocolate chip or blueberry.
- Sausage– Go for breakfast sausage links but you could also use smoked sausage, sausage patties, crispy bacon or even fried bologna. Cook them first.
- Eggs– Scramble the eggs.
- Salt and pepper– To taste.
- Cheese– I prefer American cheese on these sandwiches but you could use a mild cheddar as well.
- Butter and maple syrup– Both optional and for serving. If you are making these for a portable breakfast option, put the butter and syrup on the inside side of the pancake instead of the outside.

How to Make
This sausage egg and cheese pancake sandwich recipe is so easy to make you can do it without drinking your coffee first!
To do it, start by heating the pancakes according to the directions on the package.
While the pancakes are heating, you can scramble the eggs.
To scramble the eggs, whisk the eggs together until smooth in a small bowl.
Melt butter in a skillet over medium low heat and pour the beaten eggs into it.
Stir the eggs occasionally until they’re loosely scrambled and cooked through.
Season them with salt and pepper to taste and set the scrambled eggs aside while you start building your breakfast sandwiches.
To make your sandwiches, add a slice of cheese to a pancake.
Top the cheese with a quarter of the eggs and top the eggs with 3 cooked sausage links and another slice of cheese.
Finish your sandwich by topping with another pancake.
Repeat this until you’ve made 4 sandwiches.
Then serve warm and top them with a pat of butter and a drizzle of syrup.

Storing leftovers
If you have leftover breakfast andwiches wrap them tightly in plastic wrap or foil and refridgerate them for up to 3 days.
Reheat them in a 300 degree oven until warmed through.
If you think you will have any left, I recommend skipping the maple syrup until you are ready to eat them.
Freezing Instructions
To freeze these, assemble them as directed above.
Let them first cool to room temperature.
Then wrap the sandwiches tightly in foil and pop them in a ziplocking freezer bag.
Freeze them for up to 3 months.
The night before you want to enjoy these, take them out of the freezer and put them in the fridge to defrost.
When you are ready to eat them, warm them in a 300 degree oven until the egg is warmed through.

Tips and Tricks
- Feel free to sub crisp bacon, smoked sausage or sausage patties for the sausage links.
- Serve them as pancake tacos by using one pancake instead of two. The cheese will melt against the pancake and help hold in the pancake.
- Don’t have frozen pancakes? You can use toaster waffles instead!
- This is perfect for assembly line style cooking and prepping, making it ideal for grab and go breakfasts or a brunch buffet for lazy weekends or holiday mornings.

- 12 breakfast sausage links
- 8 eggs
- salt & pepper to taste
- 2 tbsp butter
- 8 slices American cheese
- butter for serving
- maple syrup for serving
Instructions
- Whisk the eggs together until smooth. Melt 2 tablespoons of butter in a medium skillet over medium low heat.8 eggs, 2 tbsp butter
- Once melted pour in the eggs, and cook (stirring occasionally) until they're loosely scrambled and cooked through. Season them with salt & pepper, to taste, and set aside.salt & pepper
- To make a sandwich, add a slice of American cheese to a pancake. Top the cheese slice with 1/4 of the eggs. Top with 3 cooked sausage links, followed by another slice of cheese.
