Sausage Egg & Cheese Pancake Sandwiches
Sausage, egg and cheese pancake sandwiches are a quick and hearty breakfast sandwich. This easy meal features all the classic morning flavors in one portable package.
Boys are always hungry.
Always.
But especially first thing in the morning.
So being a boy mom, I try to come up with ways to keep my boys fed and happy first thing in the morning.
I have a few requirements for their morning meal.
It needs to be yummy and filling of course, but it also needs to be easy.
Mornings are hard enough as is.
Why make them harder?
And these sausage, egg and cheese sandwiches are so easy that I can get them going without needing to drink coffee first.
Plus, they are delicious and my boys love them so they are always on repeat in this house!
Ingredients
To make this you’ll need:
- Frozen pancakes– Cook them according to the package directions. If you prefer you could also use leftover homemade pancakes.
- Sausage– Go for breakfast sausage but you could also use smoked sausage, sausage patties or even fried bologna.
- Eggs– Scramble them.
- Salt and pepper
- Cheese– I prefer American cheese on these sandwiches but you could use a mild cheddar as well.
- Butter and maple syrup– both optional and for serving
How to Make
These sandwiches are so easy to make that you won’t even need to drink your coffee first.
To do it, start by heating the pancakes according to the directions on the package.
While the pancakes are heating, you can scramble the eggs.
To scramble the eggs, whisk the eggs together until smooth.
Then pour the whisked eggs into a skillet with melted butter.
Stir occasionally until they’re loosely scrambled and cooked through.
Season them with salt and pepper to taste and set them aside.
Now you can assemble your sandwiches.
To make your sandwiches, add a slice of cheese to a pancake.
Top the cheese with a quarter of the eggs and top the eggs with 3 cooked sausage links and another slice of cheese.
Finish your sandwich by topping with another pancake.
Repeat this until you’ve made 4 sandwiches.
Then serve warm and top them with a pat of butter and a drizzle of syrup.
Storing leftovers
If you have leftovers, you can store them by putting them in a freezer bag and freezing until the night before you want to eat them.
Then pop them in the fridge the night before to defrost and warm them in the oven when you are ready to eat until the egg is warmed through and the cheese has melted.
Tips and Tricks
- Feel free to sub crisp bacon, smoked sausage or sausage patties for the sausage links.
- Serve them as pancake tacos by using one pancake instead of two. The cheese will melt against the pancake and help hold in the pancake.
- This is perfect for assembly line style cooking and prepping, making it ideal for grab and go breakfasts or a brunch buffet for lazy weekends or holiday mornings.

Sausage Egg & Cheese Pancake Sandwiches
Ingredients
- 8 frozen pancakes cooked according to the package directions
- 12 breakfast sausage links
- 8 eggs
- salt & pepper to taste
- 2 tbsp butter
- 8 slices American cheese
- butter for serving
- maple syrup for serving
Instructions
- Whisk the eggs together until smooth. Melt 2 tablespoons of butter in a medium skillet over medium low heat.
- Once melted pour in the eggs, and cook (stirring occasionally) until they're loosely scrambled and cooked through. Season them with salt & pepper, to taste, and set aside.
- To make a sandwich, add a slice of American cheese to a pancake. Top the cheese slice with 1/4 of the eggs. Top with 3 cooked sausage links, followed by another slice of cheese. Finish the sandwich off by topping it with another pancake.
- Repeat until the remaining three sandwiches have been assembled.
- Serve warm, topped with a small pat of butter and a drizzle of syrup.
