How to Make
This kielbasa sheet pan meal is so easy.
Just toss the prepared potatoes, sausage, and vegetables together in a large mixing bowl.
Set the sausage mixture aside.
Whisk the oil and seasonings together in a small bowl.
Pour the mixture over the sausage and vegetable mixture and gently toss everything until the seasoned oil coats everything.

Lightly spray a large rimmed baking sheet with nonstick cooking spray.
Spread the kielbasa vegetable mixture out in an even layer on the pan.
Bake at 400° for 20 minutes.
After 20 minutes, carefully stir the mixture.
Then spread it back out in an even layer and put it back in the oven to keep baking for another 15 minute or until the vegetables have browned.
Serve warm and enjoy!

Storing Leftovers
Store any leftovers in an airtight container in the refrigerator for up to 4 days.
Reheat in the oven or a skillet until warmed through to help keep the potatoes from getting too soft.

Tips and Tricks
- Cut the potatoes into evenly sized pieces so they cook at the same rate.
- Don’t overcrowd the pan or the vegetables will steam instead of roast. It would be better to use two pans if needed.
- Make sure you don’t skip stirring halfway through. This ensures even browning.
- Swap in other vegetables like broccoli, green beans, or carrots based on what you have or like.
- For easier cleanup, line the sheet pan with parchment or foil first.
