Double Chocolate Chunk Muffins (Costco Copycat)

These double chocolate chunk muffins are a pretty spot on copy cat of the Kirkland chocolate muffins from Costco. These muffins are ultra rich, chocolatey, and the perfect way for anyone with a sweet tooth to start the day!

I love Costco.

Its selection of ready made bakery items just can’t be beat.

One of my favorites? The chocolate chunk muffins.

They are decadent and rich, studded with chocolate chips.

The one thing I don’t love about Costco?

It’s always crowded.

And when I want those double chocolate chunk muffins without having to battle the crowds, now I can have my cake muffins and eat em too!

Ingredients

To make this you’ll need:

  • Eggs
  • Oil– Any light colored, mild oil
  • Water
  • Vanilla extract– Real is best
  • Greek yogurt– Make sure you are using plain Greek yogurt and not flavored.
  • Cake mix– a 15.25 ounce package of Devil’s food cake mix
  • Instant pudding– a 3.9 ounce box of instant chocolate fudge pudding
  • Cinnamon
  • Chocolate chips– Semisweet

How to Make

Making these double chocolate chunk muffins is pretty easy.

To do it, beat together the  electric mixer combine the eggs, oil, milk, water and vanilla.

Once they are well combined, whip in the Greek yogurt.

Using a spoon, stir in the cake mix, dry pudding mix, and cinnamon.

Stir in 2 cups of chocolate chips.

Fill a dozen jumbo muffin tins lined with jumbo liners with the muffin batter.

Top each muffin with an equal portion of the remaining chocolate chips.

Bake for 20-25 minutes until a toothpick comes out clean.

Let them cool and enjoy!

Storing

Store these muffins in an airtight container on the counter for up to 3 days.

Tips and Tricks

  • You can use any chocolate cake mix you like if you don’t have devil’s food cake.
  • The cinnamon is what gives the muffins their Costco copycat taste so don’t omit it.
  • You can make these in a regular or mini muffin tin instead of a jumbo one. Just make sure you adjust the cooking time down to accommodate for the size.

Ingredients

  • 3 eggs
  • 1/2 cup oil
  • 1/2 cup milk
  • 1/4 cup water
  • 1 teaspoon vanilla
  • 1 cup sour cream can substitute plain Greek yogurt
  • 1 15.25 ounce Devil’s food cake mix
  • 1 3.9 ounce package instant chocolate fudge pudding
  • 1/2 teaspoon cinnamon
  • 2 1/2 cups semisweet chocolate chips divided

Instructions

  • Preheat your oven to 375 degrees.
  • Line 12 jumbo muffin tins with jumbo liners.
  • In a large bowl using an electric mixer combine the eggs, oil, milk, water and vanilla.
    3 eggs, 1/2 cup oil, 1/2 cup milk, 1/4 cup water, 1 teaspoon vanilla
  • Next whip in the sour cream.
    1 cup sour cream
  • Using a spoon add the cake mix, dry pudding mix and cinnamon.
    1 15.25 ounce Devil’s food cake mix, 1 3.9 ounce package instant chocolate fudge pudding, 1/2 teaspoon cinnamon
  • Stir until well combined.
  • Stir in 2 cups of chocolate chips.
    2 1/2 cups semisweet chocolate chips divided
  • Fill the lined muffin tins and top with the remaining chocolate chips.
  • Bake for 20-25 minutes until a toothpick comes out clean.

Notes

  • You can use any chocolate cake mix you like if you don't have devil's food cake.
  • The cinnamon is what gives the muffins their Costco copycat taste so don't omit it.
