Every Easter we have ham.

And every year we have tons of leftovers.

Well my boys are super picky about what they will eat a few days in a row.

You’d think with appetites as big as theirs they wouldn’t care!

And I am super picky about not letting food go to waste.

This devil ham salad is the perfect way for me to use up leftover ham and have the boys happily eat it.

Ingredients

To make this you’ll need:

  • Ham– Cooked ham, trimmed of fat and chopped. Don’t have ham? You could sub bologna.
  • Celery– Chopped.
  • Hard boiled eggs- This is perfect for using up your hard boiled Easter eggs. And if you haven’t check out my recipe for Air Fryer Hard Boiled Eggs
  • Onion- Yellow onion minced.
  • Relish– I recommend dill pickle relish instead of other varieties.
  • Mayonnaise– Use real mayo, not mayonnaise style dressing, for the best results.
  • Dijon mustard– For a little extra bite and tang.
  • Salt and pepper– To taste
  • Hot sauce– For serving.

How to Make

This is so easy to make!

To do it, add all of the ingredients, except the mayo, to the bowl of a large food processor fitted with the blade attachment.

Pulse the mixture until everything is evenly minced.

Then, transfer the mixture to a large mixing bowl.

Stir in the mayonnaise until evenly combined.

Season the ham salad with salt and pepper, to taste.

Serve, as is or with hot sauce and enjoy.

You could also cover it, chill it, then serve.

Can I make ham salad ahead of time?

Yes! You can make this a day or two ahead of time and just store it covered in the fridge until you are ready to serve it.

How to Use Ham Salad- Serving Suggestions

This is such a versatile recipe!

We use it as:

  • dip with crackers, pretzels and cut veggies
  • a filling for sandwiches 
  • spreading onto crackers and bagels

If you use this for sandwiches, I highly recommend a pretzel bun but any bread works.

Storing Leftovers

Keep leftovers in an airtight container in the fridge for up to 4 days.

Tips and Tricks

  • You don’t need to food process this if you don’t have one. You could just chop everything by hand and toss it together with the mayo. It will taste the same but the texture won’t be quite the same.
  • Add a little paprika for extra flavor or garnish.
  • Not a relish fan? You could omit this if desired.

Ingredients

  • 1 1/2 - 2 lbs cooked ham trimmed of fat & chopped
  • 2 stalks celery chopped
  • 2 hard boiled eggs
  • 1/4 cup minced yellow onion
  • 1 tbsp dill pickle relish
  • 1 tbsp Dijon mustard
  • 1 cup mayonnaise if too dry, you can always mix in more
  • salt & pepper to taste

Instructions

  • Add all of the ingredients, except mayo, to the bowl of a large food processor fitted with the blade attachment.
  • Pulse the mixture until everything is evenly minced, roughly 20 times.
  • Transfer the mixture to a large mixing bowl.
  • Add the mayonnaise to the bowl, and stir until evenly combined.
  • Season the ham salad with salt & pepper, to taste.
  • Serve, as is, and enjoy- or cover & chill, then serve.
