Cheesy Beef Noodle Casserole
Cheesy beef noodle casserole is a comforting hearty dinner that makes for a cozy meal during the winter months. A combination of ground beef, tomato soup, golden mushrooms, and other flavors get baked to a golden brown thanks to mozzarella and Parmesan cheesy crust. This dish is meal time magic!
Once the weather turns colder and even a hint of a snow is in the air, we need stick to your ribs casseroles to warm us up.
And it doesn’t matter if it doesn’t snow until February, we’re still thinking flakes and wanting them during the holiday season.
Which means we need cozy dinners!
And this cheesy beef noodle is the coziest of dinners!
Egg noodles and ground beef tossed in a yummy mixture of golden mushrooms and tomato soup all baked to golden cheesy perfection!
It’s enough to satisfy even the biggest of appetites.
And you know with a house full of hungry boys, that’s a must for me!
Ingredients
To make this you’ll need:
- Egg noodles– A 12 ounce bag of the wide egg noodles.
- Ground beef– Go for leaner ground beef like 80/20 just so you’re not losing too much beef to grease.
- Condensed soup– A can of condensed tomato soup and a can of condensed golden mushroom soup.
- Half and half– Don’t substitute a lower fat dairy. You want the most creaminess.
- Seasonings– Dried chopped onion, Worcestershire sauce, garlic powder, and salt and pepper
- Cheese– Both shredded mozzarella and shredded Parmesan. You could also use an Italian cheese blend.
How to Make
Making this cheesy beef noodle casserole is pretty easy!
Just cook the noodles for the lowest recommended amount of time on the package.
As soon as they reach the shortest recommended cook time on the package, drain the noodles and run them under cold water to stop them from cooking further.
While the noodle are cooking, sauté the ground beef in a large skillet over medium high heat.
Stir the beef to crumble it as it cooks.
When the beef is cooked through, drain the meat, and set aside.
Then stir together the condensed soups until evenly combined in a large mixing bowl.
Once the soups are combined, stir in the half and half, minced onion, Worcestershire, garlic powder, and salt and pepper.
Now stir the cooked meat and the noodles to the pot with.
Transfer the casserole mixture to a lightly greased 9×13″ casserole dish, spreading it out evenly.
Sprinkle the mozzarella and Parmesan cheese evenly out over top of the casserole.
Bake the casserole dish at 350 degrees for 25 minutes, or until heated through and the cheese has melted and begun to turn golden brown.
Once the cheese has melted and started to turn golden brown, take the casserole dish out of the oven.
Let the casserole rest 1-2 minutes before scooping and serving.
Enjoy!
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days.
Reheat in the microwave or a hot oven until warmed through.
Tips and Tricks
- Do not cook the noodles longer than the minimum time recommended. The noodles will cook some in the oven so they will be mushy if you cook them longer on the stove top.
- If you prefer you can substitute ground chicken or turkey for the ground beef in this casserole.
- Make sure you let the casserole rest when you take it out of the oven. You want to give the casserole a chance to set a bit so it doesn’t run all over when you serve it.

- 1 cup half & half
- 2 tbsp dried chopped onion
- 2 tsp Worcestershire sauce
- 1/4 tsp garlic powder
- salt & pepper, to taste
- 3/4 cup shredded mozzarella cheese
- 1/4 cup shredded Parmesan cheese
Instructions
- Cook the noodles for the lowest recommended amount of time on the package. They will finish cooking later in the oven, and you don't want them to over cook and turn mushy.1 12 oz bag wide egg noodles
- Drain the cooked noodles, and then run them under cold water, tossing, to stop cooking.
- While the noodle are cooking, sautéed the ground beef in a large skillet over medium high heat- stirring & breaking it up as it cooks. When cooked through, drain the meat, and set aside.1 lb ground beef
- In a large mixing bowl, stir together the condensed soups until evenly combined. Add in the half & half, onion, Worcestershire, garlic powder, and salt & pepper- stirring to evenly combine.1 can condensed tomato soup, 1 can condensed golden mushroom soup, 1 cup half & half, 2 tbsp dried chopped onion, 2 tsp Worcestershire sauce, 1/4 tsp garlic powder, salt & pepper, to taste
- Now add the cooked meat and the noodles, stirring to evenly combine. Transfer the casserole mixture to a lightly greased 9x13" casserole dish. Use a spatula tp spread out the mixture evenly.
- Sprinkle the mozzarella evenly out over top of the casserole. Then sprinkle the Parmesan. Bake the dish at 350 degrees for 25 minutes, or until heated through and the cheese has melted and begun to turn golden brown.3/4 cup shredded mozzarella cheese, 1/4 cup shredded Parmesan cheese
- Let the mixture rest 1-2 minutes before scooping & serving. Enjoy!
