Apple Spice Poke Cake
Apple spice poke cake is a delicious and easy fall dessert that will please both cake and pie lovers. With all the warming fall spices and chock full of apple pie filling, this poke cake is a sweet ending to any meal.

Have you ever had poke cake?
It is one of my favorite ways to dress up cakes and ensure each mouthful is perfectly moist and delicious.
Poke cakes are dressed up dump cakes.
To make a poke cake, you bake a dump cake and poke holes evenly throughout the baked, cooled cake with the end of a wooden spoon.

Then you pour some sort of filling over the cake before you add a topping so the filling seeps down into the cake.
This create pockets of moist flavor in all the nooks and crannies.
And in this apple spice poke cake, the filling is a smooth apple filling so it has all the flavors of a classic apple pie.
Ingredients
To make this you’ll need:

- Cake mix– A box of your favorite spice cake mix. Brand doesn’t matter.
- Eggs
- Water
- Oil– Vegetable oil or canola oil
- Apple pie filling– No need to make homemade apple pie filling for this. A 20 ounce can of apple pie filling will work perfectly.
- Pudding mix– A box of no cook vanilla pudding mix
- Milk– For the pudding
- Whipped topping– A kind like Cool Whip that you find in the frozen food section. Thaw it.
- Optional toppings– Caramel and chopped nuts
How to Make
The beauty of this apple spice dump cake is it’s as easy as it is delicious.

To make it, mix the cake mix, eggs, water, and oil together in a large bowl with a hand mixer until it’s smooth.
Pour the mixture into a 9×13 baking pan lightly sprayed with nonstick spray.

Bake the cake cake for 26 to 29 minutes or until toothpick inserted in the middle comes out clean.
Take the cake out of the oven and let it cool.

When the cake is completely cool, mix together the apple pie filling, vanilla pudding mix and milk in a blender to liquify the apples and combine them with the pudding.
Poke holes in the cake with the end of a wooden spoon, and then pour the apple pudding filling over the cake.

Spread it back and forth so it fills in the holes.
Then spread the whipped topping over the cake.

Finish with a drizzle of caramel and a sprinkle of chopped sundae nuts.
Serve and enjoy!

Storing
Store this cake tightly wrapped in the fridge for up to a week.
Keep in mind the longer the cake sits in the fridge, the more it will absorb the filling so the texture may change.

Tips and Tricks
- Can’t find spice cake mix? You can use white or yellow cake mix and add a tablespoon of apple pie spice to the mix.
- Make sure the cake is totally cool before you spread the filling out. If the cake is warm, the filling will melt.
- When you poke the holes, be sure to spread them evenly over the cake to disperse the filling throughout the cake.

The recipe card indicates it’s a 1 oz box of pudding, and it should be the instant kind.
Meaghan Pantoni everyone loved the cake. Just the right dessert after a big dinner. I have a diabetic daughter in law so made it with sugar free cake, pudding, whipped cream and light apple pie filling. Turned out great! Will be using recipe again 🍎

The smallest package of pudding is 3 ounces. Should we measure one ounce of pudding mix?
It’s gotten harder to find it in the 1 ounce size, so yes the next best thing would be to measure out an ounce of the dry mix.
