Apple Spice Poke Cake

Apple spice poke cake is a delicious and easy fall dessert that will please both cake and pie lovers. With all the warming fall spices and chock full of apple pie filling, this poke cake is a sweet ending to any meal.

I feel kind of bad for apples. People tend to overlook apples in favor of pumpkin this time of year.

How is that fair to apples? It’s not. And not only isn’t it fair to apples, it’s not fair to you either because apple desserts are every bit as yummy as pumpkin desserts.

Take this apple spice poke cake for example. It has all the flavors of a classic apple pie in the easiest ever spice cake.

What is poke cake anyway?

Have you ever had poke cake? It is one of my favorite ways to dress up cakes right there with dump cakes like this strawberry cheesecake dump cake.

Poke cakes are sort of like dump cakes in that they mostly rely on store bought cake mix and dumping the batter into a 9×13 baking dish. 

Whereas a dump cake would be done after baking and topping, with a poke cake, you use the end of a wooden spoon to poke holes in the cooled cake. Then you pour some sort of filling over the cake before you add a topping- normally whipped cream.

Pouring the filling over the holes in the cake allows the filling to seep down into the cake and create pockets of moist flavor in all the nooks and crannies. In the case of this apple spice poke cake, the filling is a smooth apple filling.

How to Make Apple Spice Poke Cake

Making apple spice poke cake is so easy! I love to use this recipe in place of more complicated cakes and pies.

To make an apple spice poke cake start by combining a box of spice cake mix with 3 eggs, water, and vegetable oil. Use a hand mixer to mix the ingredients together until they are smooth and there are no pockets of dry mix left.

Pour the mix into a 9×13 baking pan that’s been lightly sprayed with nonstick spray. Then bake the cake for 26 to 29 minutes or until a tooth pick inserted in the middle comes out clean. Now let the cake cool completely on your countertop.

When the cake is cool, use the under of a wooden spoon to poke holes in the cake. Then mix together apple pie filling, milk and a packet of vanilla pudding mix in your blender. Blend it until the ingredients are smooth.

Now pour the apple pudding over the cake evenly. Use a spatula to spread it over the cake. As you spread filling, it will push down into the holes and fill them in.

Finish the cake by topping it with whipped topping and drizzling on caramel and chopped sundae nuts if you’d like.

Ingredients

  • Spice Cake mix
  • 3 eggs
  • 1 cup water
  • 1/3 cup vegetable oil
  • 20 ounce can apple pie filling
  • 1 ounce box vanilla pudding mix
  • 1 cup milk
  • 8 ounces whipped topping thawed
  • Optional toppings: caramel and sundae nuts

Instructions

  • Combine first 4 ingredients in a large bowl and mix with a hand mixer until smooth.
  • Pour mixture into a lightly sprayed 9x13 baking pan. Bake cake for 26 to 29 minutes or until toothpick inserted in the middle comes out clean.
  • Allow cake to completely cool, and then mix together apple pie filling, vanilla pudding mix and milk in a blender in order to liquify the apples.
  • Poke holes in the cake with the end of a wooden spoon, and then pour the apple pudding filling over the cake and spread it back and forth to fill in the holes.
  • Top with whipped cream, caramel and chopped sundae nuts.
