Apple Spice Poke Cake

Apple spice poke cake is a delicious and easy fall dessert that will please both cake and pie lovers. With all the warming fall spices and chock full of apple pie filling, this poke cake is a sweet ending to any meal.

Ingredients

  • 1 15.25 oz box Spice Cake mix
  • 3 eggs
  • 1 cup water
  • 1/3 cup vegetable oil
  • 1 20 oz can apple pie filling
  • 1 1 oz box vanilla pudding mix
  • 1 cup milk
  • 8 ounces whipped topping thawed
  • caramel sauce for topping
  • sundae nuts for topping

Instructions

  • Combine first 4 ingredients in a large bowl and mix with a hand mixer until smooth.
    1 15.25 oz box Spice Cake mix, 3 eggs, 1 cup water, 1/3 cup vegetable oil
  • Pour mixture into a lightly sprayed 9x13 baking pan. Bake cake for 26 to 29 minutes or until toothpick inserted in the middle comes out clean.
  • Allow cake to completely cool then mix together apple pie filling, vanilla pudding mix and milk in a blender in order to liquify the apples.
    1 20 oz can apple pie filling, 1 1 oz box vanilla pudding mix, 1 cup milk
  • Poke holes in the cake with the end of a wooden spoon, and then pour the apple pudding filling over the cake and spread it back and forth to fill in the holes.
  • Top with whipped cream, caramel and chopped sundae nuts.
    8 ounces whipped topping, caramel sauce, sundae nuts

Notes

  • Can't find spice cake mix? You can use white or yellow cake mix and add a tablespoon of apple pie spice to the mix.
  • Make sure the cake is totally cool before you spread the filling out. If the cake is warm, the filling will melt.
  • When you poke the holes, be sure to spread them evenly over the cake to disperse the filling throughout the cake.
