Strawberry Chocolate Chip Cookies

Imagine the best cookies you’ve ever had- light & fluffy, and studded with semi sweet milk chocolate chips. Then picture them also swirled with chunks of fresh strawberries. These Strawberry Chocolate Chip Cookies are a must have!

This post and recipe was created for #SummerDessertWeek! I was sent samples by some of the sponsor companies, but as always the opinions are 100% mine.

Growing up, I knew my Mom liked strawberries. She took us to the local ‘pick your own’ patch, every year at the end of Spring/beginning of Summer.

It was always a great time. Almost as much fun as going to pick our own pumpkins in the Fall.

Every year, we would load up cardboard clamshells full of our finest selections off the vine.

Minus all the ones we picked and then plopped right in our mouths.

The ratio of which I can’t accurately say, but if I had to guess- it was probably 1 in the basket: 3 in our bellies.

There was no shame in our game. The owner’s expected it, and they’d smile at us kids when we loaded our baskets onto the scale to be weighed and paid for.

All sticky fingers and red rimmed lips, with red dribbles dried on our chins.

What I didn’t know though, was how much my mother actually loved strawberries. Well, at least not until she was pregnant with my first sister.

8 months pregnant. In 90 degree heat. Due the first of July.

That was both the longest trip we ever took to the patch, and the most memorable.

We had one job that trip, well aside from filling the communal pot with fruit to take home. A prime directive if you will.

Bring Mom, who for obvious reasons had found a soft spot to sit down and rest, the sweetest ripest berries we could find. And Keep. Them. Coming.

And we did- my Dad, my Grandma, and me.

So many that I thought Mom couldn’t possibly ever eat another, which she didn’t- for awhile. Understandably.

To this day my sister hates the things. Won’t touch them with a 10′ pole. Mom & I just laugh, and laugh. Because (of course) we know why!

#SummerDessertWeek is drawing to a close, and said little sister just celebrated another birthday. She’s now a very beautiful, successful 26 years old. 

What better way to celebrate dessert (and a birthday) than with a sugary sweet? And to pay a little tribute to one of my favorite warm weather berrys? Combine the two together into one epic cookie– Strawberry Chocolate Chip Cookies.

Soft & chewy, fluffy yet moist– these Strawberry Chocolate Chip Cookies are studded with both semi sweet chocolate chips & freshly diced ripe strawberry pieces. They’re a perfect Summer dessert, all by themselves. Pair them with a cold glass of milk for dunkin’, and you’ve got yourself the best dang thing you’ll have all year.

The best chocolate chip cookies you've ever had are studded with bits of fresh ripe strawberries.

Ingredients

  • 1 cup butter, softened
  • 1 cup packed brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 3 cups flour
  • heaping 1 cup semi sweet chocolate chips
  • 1/2 cup diced fresh strawberries
  • additional chocolate chips and berries, for garnish

Instructions

  • In the bowl of a stand mixer, cream together butter and sugars.
  • Add in the eggs and vanilla, mixing until just evenly incorporated.
  • In a separate bowl, whisk together the salt, baking soda, and flour. With the mixture beating on low speed, slowly add the flour mix into the bowl. Continue just until all of the dry ingredients are evenly incorporated.
  • Use a spatula to fold in the chocolate chips and the diced strawberries.
  • Line a baking sheet with a baking mat, or a sheet or parchment paper, and drop the dough out onto the tray in evenly dispersed, rounded tablespoons.
  • Bake the cookies at 350 degrees for 10 minutes, or until the cookies have begun to brown. Remove the cookies from the oven and let them rest for 5 minutes.
  • Press 1-2 additional chocolate chips and pieces of strawberry into the top of each cookie. Transfer the cookies to a wire rack to finish cooling completely before serving.

    Without doubt THE BEST version of these cookies. I rarely make a recipe twice unless it’s amazing. We are now up to batch number 8 😁. It’s great to make the dough and keep in the fridge. Staggering freshly baked cookies over several days. Thank you for this recipe, it’s going in the special “keeper” book.
