Ingredients

  • 1 cup butter softened
  • 1 packed cup brown sugar
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tbsp vanilla
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 3 cups flour
  • 1 heaping cup semi sweet chocolate chips + extra for garnish
  • 1/2 cup diced fresh strawberries + extra for garnish

Instructions

  • In the bowl of a stand mixer, cream together butter and sugars.
1 cup butter, 1 packed cup brown sugar, 3/4 cup granulated sugar
  • Add in the eggs and vanilla, mixing until just evenly incorporated.
2 large eggs, 1 tbsp vanilla
  • In a separate bowl, whisk together the salt, baking soda, and flour. With the mixture beating on low speed, slowly add the flour mix into the bowl. Continue just until all of the dry ingredients are evenly incorporated.
3/4 tsp baking soda, 1/2 tsp salt, 3 cups flour
  • Use a spatula to fold in the chocolate chips and the diced strawberries.
1 heaping cup semi sweet chocolate chips, 1/2 cup diced fresh strawberries
  • Line a baking sheet with a baking mat, or a sheet or parchment paper, and drop the dough out onto the tray in evenly dispersed, rounded tablespoons.
  • Bake the cookies at 350 degrees for 10 minutes, or until the cookies have begun to brown. Remove the cookies from the oven and let them rest for 5 minutes.
  • Press 1-2 additional chocolate chips and pieces of strawberry into the top of each cookie. Transfer the cookies to a wire rack to finish cooling completely before serving.

Notes

  • Letting the butter and eggs come to room temperature before you start making the dough will help them come together easier.
  • If you forgot to pull out the butter ahead of time, pop it in the microwave and microwave it for 5 seconds. Flip it over and microwave it again for another 5 seconds. Do this 4 times or until the butter is soft but not melted.
  • Don't overmix the cookie dough. Mix it until the dough is just combined for the best cookie texture.
