Crackers… crackers. I cannot keep enough of them in the house. They’re a meal and snack staple for my guys.

Snack time, or another snack supper? Crackers with some fruit, cheese, and maybe a little deli meat, and we’re good to go.

And ya’ll know how much I love to shake things up when it comes to tried and true. I’ve been known to get pretty creative with our toppings.

These roast beef and horseradish cream cheese crackers quickly became a new family favorite.

Buttery crackers topped with a creamy horseradish dijon cream cheese spread and pieces of quality roast beef make the perfect snack or appetizer to feed any hungry crowd, even your own family.

Ingredients Needed

Like all of our favorite recipe’s this one has a simple ingredients list.

To make it you’ll need:

  • Crackers – Buttery ritz crackers are a must for this recipe
  • Cream Cheese – A block of cream cheese, softened to room temperature
  • Horseradish – Fresh ground horseradish, which can usually be found near the cheeses in the refrigerated area of your local grocery store.
  • Mustard – Dijon mustard
  • Roast Beef – A pound of shaved roast beef from the deli
  • Parsley – This is optional, but freshly chopped parsley makes a great garnish

Once you’ve gathered your ingredients, you’re ready to assemble your delicious crackers.

How To Make

Making these delicious snack crackers is actually pretty easy despite the layers of flavor.

Start by adding the cream cheese, horseradish, and mustard to a mixing bowl. Using a hand mixer whip the mixture together until smooth and creamy, with everything evenly combined.

Top each cracker with a generous scoop of the cream cheese filling, then spread it out evenly overtop. I recommend spooning it on and then using the back of the spoon to easily smooth it out.

Finish off the crackers by adding pieces of the shaved roast beef. You can use as little or as much as you want. Eyeball it.

Transfer the prepared roast beef and horseradish cream cheese crackers to a plate or serving platter, then sprinkle some chopped fresh parsley evenly out overtop for a gorgeous garnish.

Serve immediately, so that the crackers stay nice and crisp, and enjoy!

Storing

Unfortunately, these dressed up crackers do not store well. The cream cheese spread makes the cracker soggy, and nobody enjoys a soggy cracker.

Instead, if you have extras, store them individually and assemble more crackers on demand.

TIPS & TRICKS

  • You want actual ground horseradish for this recipe, not a horseradish spread. Usually you can find ground horseradish in jars in the refrigerated section of your grocery store near the cheeses.
  • While you can make this appetizer using other crackers, I highly recommend using Ritz crackers for this recipe- either the name brand or the store brand equivalent.
  • Dijon mustard is a must, do not try to substitute yellow mustard.

Ingredients

  • 1 box Ritz crackers
  • 1 8 oz. block of cream cheese softened
  • 1-2 tbsp jarred fresh ground horseradish found in the refrigerated aisle near the cheeses
  • 1-2 tbsp Dijon mustard
  • 1 lb shaved Deli roast beef
  • chopped parsley for garnish, optional

Instructions

  • In the bowl of a stand mixer, combine the cream cheese, horseradish, and mustard, creaming together until everything's evenly incorporated.
    1 8 oz. block of cream cheese, 1-2 tbsp jarred fresh ground horseradish, 1-2 tbsp Dijon mustard
  • Top each cracker with a generous spoonful of the cream cheese mixture, and use the back of the spoon to gently 'spread' the mixture out onto the cracker. Top the cream cheese spread on the crackers with the shaved roast beef.
    1 box Ritz crackers, 1 lb shaved Deli roast beef
  • If using the garnish, sprinkle the prepared crackers with chopped parsley. Serve immediately, so that the crackers stay crisp.
