Slow Cooker Sausage With Peppers And Onions

The hardest part is slicing the veggies and you can skip that if you buy them pre cut.

Other than that, the only thing this dinner asks you to do is sear some sausages.

But for the most part, you set it and forget it and have a delicious dinner waiting for you.

Ingredients

To make this you’ll need:

  • Bell peppers– Both red and green bell peppers seeded and cut into strips
  • Onion– Peeled and sliced
  • Seasoning– Salt, pepper, Italian seasoning, garlic powder
  • Marinara sauce– Your favorite jarred sauce or Homemade Marinara Sauce
  • Butter
  • Buns– For serving

How to Make

Slow cooker sausage with peppers and onions is so easy to make!

To do it, just add all of the vegetables to the bowl of your slow cooker.

Spread the seasonings evenly out over top of them.

Pour the marinara sauce over the vegetables and give everything a quick stir.

Cover and cook the veggie mixture of 2 hours on LOW, stirring halfway through.

After 2 hours, heat the butter in a skillet over medium to medium high heat.

Sear the sausages in the hot skillet on both sides.

Put the seared sausages into the slow cooker with the sauce and veggies.

Cover and cook for 4 more hours on LOW, stirring every hour.

Serve with buns for sandwiches or over pasta.

Storing Leftovers

Store leftovers in the covered bowl of your slow cooker in the fridge for up to 4 days.

Reheat in the slow cooker or microwave until warmed through.

Can I freeze sausage and peppers?

Absolutely!

To freeze this, cook the Crock Pot sausage and peppers as directed.

Let it cool to room temperature.

Spoon it into freezer safe ziplocking bags.

Freeze it for up to 3 months, defrosting it overnight in the fridge before cooking.

  • You can save yourself prep time and buy sliced pepper and onion strips in the produce section of your grocery store. Keep in mind you will more than likely need more than one package depending on the size your grocer carries.
  • Do not substitute frozen peppers and onions. They will get mushy.

Ingredients

  • 4 red bell peppers seeded & sliced into strips
  • 4 green bell peppers seeded & sliced into strips
  • 1 large yellow onion peeled & sliced
  • salt & pepper to taste
  • 1 tbsp Italian seasoning
  • 1 1/2 tbsp garlic powder
  • 1 1/2 cups marinara sauce
  • 2 tbsp butter
  • 2 19 oz pkgs sweet Italian sausages
  • buns for serving

Instructions

  • Add all of the vegetables to the bowl of a slow cooker, then top them with the seasonings.
    4 red bell peppers, 4 green bell peppers, 1 large yellow onion, salt & pepper, 1 tbsp Italian seasoning, 1 1/2 tbsp garlic powder
  • Pour the marinara sauce overtop, then gently stir to combine.
    1 1/2 cups marinara sauce
  • Cover and cook on LOW for 2 hours, stirring halfway through.
  • Sear the sausages with butter in a skillet, on both sides, then transfer them to the slow cooker.
    2 tbsp butter, 2 19 oz pkgs sweet Italian sausages
  • Cover and continue cooking for 4 more hours, stirring every hour.
  • Serve warm in buns, and enjoy!
