{One Pot Wonder} Chicken Lo Mein
An easy rendition of a standard take out favorite, our {One Pot Wonder} Chicken Lo Mein (obviously) cooks in one pot and is studded with tender veggies and chunks of savory chicken. Asian flavor is infused into every bite of pasta, thanks to the seasonings and the one pot bit.
It’s Sunday again. Sundays I find myself wondering why my family wants dinner every single night. I mean I fed them last night. I’m kidding, kinda. Sundays I want to relax.
All. Day. Long.
I want to read my book. I want to curl up on the couch with my boys and watch movies or our favorite shows. I want to play with them on the playground.
I want to laugh, a lot, and make blanket forts. I want to take an afternoon nap. I want to do so many things. What I absolutely do not want to do on a Sunday, is cook dinner.
Still, the family has to eat.
As a solution, I try to find quick, easy recipes that don’t require a lot of work on my part. ‘One pot wonder’ meals are a favorite of mine on Sundays. Little work, and even less clean-up required afterwards.
This {One Pot Wonder} Chicken Lo Mein couldn’t have been any easier to make, or any more flavorful. It’s everything I want in a dinner, especially on a night I don’t want to cook.
It’s got chunks of chicken (always a hit around here), fresh tender veggies, and pasta- all infused with flavor thanks to it cooking in a single pot from start to finish. Meal time magic, that’s what that’s called!

To get started, add the chopped chicken, pasta, prepared veggies, broth and of course the seasonings to a heavy bottomed dutch oven. You don’t have to use a dutch oven, I just love the ease of cooking with cast iron when possible due to its even heating & cooking. I like to know what to expect. If you don’t want to use, or don’t have, a heavy bottomed pot then shoot for another large soup pot.
Bring the mixture to a boil, and then reduce the heat to a simmer. Place a lid on the pot, and cook for about 15 minutes. Make sure to stir this dish frequently to prevent the noodles from sticking together or clumping. Nobody enjoys clumpy pasta.
Continue simmering the pasta until most of the liquid has cooked out, and the pasta’s cooked through. Remove the pot from heat. Remove the lid, and let the dish rest for five minutes before serving. We love to top ours with extra green onion & crunchy chow mein noodles.
This dinner is a real sanity saver when you don’t wanna lift a finger in the kitchen, but dinner still has to be made. I’ve also never heard my kids complain about the veggies in this {One Pot Wonder} Chicken Lo Mein, or pick out any of the chicken. That’s a real winner in my book, especially when it’s infused with Asian flavors.

{One Pot Wonder} Chicken Lo Mein
Ingredients
- 1 lb boneless skinless chicken breast, cut into chunks
- 1 lb spaghetti or lo mein noodles
- 4 medium carrots peeled and cut into 3 inch long strips
- 1 medium red bell pepper cut in thin 3 inch long strips
- 1 bunch green onions white part thinly sliced and the green part cut into 3 inch long strips
- 4 tsp garlic minced
- 1/4 cup soy sauce
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 tsp corn starch
- 1 tbsp sugar
- 1/2 tsp crushed red pepper flakes
- 4 1/2 cups chicken broth
- 2 tsp extra virgin olive oil
Instructions
- Add the chicken, then the pasta, then the remaining ingredients to a large stockpot or dutch oven, and cover. Bring to a boil. Stir and reduce to a simmer.
- Cook covered for about 15 minutes, stirring occasionally. Cook until most of the liquid is gone and the chicken is cooked through.
- Remove the lid, let the lo mein rest for 5 minutes before scooping and serving.

This recipe was great and easy to make! It was very yummy, specially if your like me and 1. Love pasta and two love cooked carrots! I will defiantly make it again!
