One Pot Chicken Lo Mein

This one pot chicken lo mein is an easier version of the classic Chinese food dish that can be made in your own kitchen in a single pot. Studded with tender veggies, chunks of savory chicken, and bold Asian flavor it's a simple dinner the whole family will love.

Ingredients

  • 1 lb boneless skinless chicken breast, cut into chunks
  • 1 lb spaghetti or lo mein noodles
  • 4 medium carrots peeled and cut into 3 inch long strips
  • 1 medium red bell pepper cut in thin 3 inch long strips
  • 1 bunch green onions white part thinly sliced and the green part cut into 3 inch long strips
  • 4 tsp garlic minced
  • 1/4 cup soy sauce
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp corn starch
  • 1 tbsp sugar
  • 1/2 tsp crushed red pepper flakes
  • 4 1/2 cups chicken broth
  • 2 tsp extra virgin olive oil

Instructions

  • Add the chicken, then the pasta, then the remaining ingredients to a large stockpot or dutch oven, and cover. Bring to a boil. Stir and reduce to a simmer.
    1 lb boneless, 1 lb spaghetti, 4 medium carrots, 1 medium red bell pepper, 1 bunch green onions, 4 tsp garlic, 1/4 cup soy sauce, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1 tsp corn starch, 1 tbsp sugar, 1/2 tsp crushed red pepper flakes, 4 1/2 cups chicken broth, 2 tsp extra virgin olive oil
  • Cook covered for about 15 minutes, stirring occasionally. Cook until most of the liquid is gone and the chicken is cooked through.
  • Remove the lid, let the lo mein rest for 5 minutes before scooping and serving.

Notes

  • I recommend using a Dutch oven for this recipe because of the even heating and cooking with a cast iron pot; however, this is optional. If you don't have a Dutch oven use a heavy bottomed soup pot.
  • You will need to stir the noodles often, especially at first, to prevent the pasta from sticking together and forming a giant inedible clump.
  • Don't have soy sauce or just don't like it? Substitute an equal amount of teriyaki sauce instead.
  • For more authentic Asian flavor, you can substitute sesame oil for the olive oil and add a splash of oyster sauce to the pasta.
  • Want to give it a little crunch? Add in some chopped drained water chestnuts.
