We are a meat and potatoes family through and through.

I could eat salads and other variations, but the boys, well…

Let’s just say not so much.

They aren’t happy without some protein and a side of spuds.

With their appetites, I get it.

But it does make getting a variety of flavors on the table kind of tough and I find myself relying on standards like meatloaf and mashed potatoes.

This Mississippi meatloaf recipe is a tasty variation that makes everyone in our house happy.

The boys love the hearty main dish and I’m happy that it’s full of flavors you wouldn’t get in a traditional meatloaf thanks to ranch seasoning and briny, zippy pepperoncini juice.

It’s a delicious combination of Baked Mississippi Chicken and Mississippi Pot Roast Stew mashed up with meatloaf.

Ingredients

To make this you’ll need:

Storing Leftovers

Store leftover meatloaf in an airtight container in the fridge for up to 4 days.

Make sure to store the gravy in a separate container in the fridge.

The gravy will thicken as it sits in the fridge so you may want to thin it out with a little more water or pepperoncini juice if needed.

Tips and Tricks

  • Don’t skip the milk in the meatloaf. It tenderizes the ground beef.
  • You don’t need to cover the meatloaf when you are cooking it. Letting it cook uncovered will help the gravy thicken up and caramelize on the meatloaf.
  •  You don’t need to worry about adding any other seasoning to the meatloaf. The gravy packet, ranch packet, and pepperoncini juice make the meatloaf zesty, a touch spicy, and perfectly salted.
