Grilled Caesar Asparagus

Crisp green stalks of fresh asparagus are a staple of the Spring and Summer grilling season. This Grilled Caesar Asparagus is a perfect side dish to any grilled entree, or a light healthy meal all on it’s own.
On top of being the best, easiest grilled asparagus ever- this healthy version is taken to new heights when served drizzled with creamy Caesar dressing and sprinkled with shredded Parmesan cheese.
I always find myself trying to keep things simple in the summer time.
Maybe it’s the way everything seems to slow down, and for the most part, take a more leisurely pace. Of course, that could just be the heat.
Or the fact that all the kids are home, and for people who don’t drive they sure do make a lot of plans to go all over the county.
And that we essentially throw our traditional school year schedules out the window. So yeah, summer meals. I’m in no rush, but everybody’s still got to eat.
In the evening’s, I’d much rather be sitting around outside with a good book, their play and laughter the perfect back ground music, than inside in the kitchen.
That’s where asparagus enters into our meal-time picture, specifically this Grilled Caesar Asparagus. Grilled with a little oil, salt, and pepper, asparagus makes for a simple summer side dish.
Top that beautiful grilled green bounty with your favorite Caesar dressing, croutons, and some shredded Parmesan cheese, and you’ve got a perfect meatless meal that’s filling without weighing you down, and ready in a breeze. Or a hit side dish at your next neighborhood barbecue.
As for the Caesar dressing, we recommend using our quick & easy, homemade version, but you’re preferred version will do just as well.
Serve these Grilled Caesar Asparagus stalks as is, or chop them into quarters for a more traditional, ‘tossed-salad’ type dish.

Grilled Caesar Aparagus
Ingredients
- 1 1/2 pounds Michigan asparagus trimmed
- 1 tbsp olive oil
- salt & freshly cracked black pepper to taste
- fresh cracked black pepper to taste
- Caesar salad dressing
- garlic flavored croutons
- shredded Parmesan cheese
Instructions
- To a large mixing bowl, add the asparagus spears, oil, and a liberal amount of both salt and pepper. Toss them so that the spears are all evenly coated.
- Grill the asparagus over medium-high heat (turning only once or twice) until crisp-tender and slightly charred.
- Using tongs, gently transfer the asparagus to a serving platter. Set aside to cool for 2-3 minutes. So that it's still warm, but not so hot it will do funny things to the dressing or completely melt the cheese.
- Serve topped with a generous drizzle of the Caesar dressing of your choice, a handful of croutons, and a sprinkle of Parmesan cheese, and another round of fresh cracked black pepper, to taste. Enjoy!
