Ingredients
- 2 1/2 lbs sirloin steak, fat trimmed and chopped into 2" pieces
- 1 lb baby potatoes, quartered, boiled for 3-4 minutes, drained & cooled
- 2 tbsp olive oil
- 2 tbsp butter, melted & cooled
- salt & pepper, to taste
- 2 tbsp minced garlic
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp dried parsley
- 1 tsp dried thyme
- pinch fresh rosemary leaves
- fresh thyme leaves, for garnish (option)
Instructions
- To a large mixing bowl, add the steak, oil, butter, salt, pepper, oregano, parsley, dried thyme, and rosemary leaves. Using a spatula, stir gently until everything is evenly combined and coated.
- Separate and spread out 4 12x12 sheets of aluminum foil. Divide the steak and potato mixture evenly out onto the center of each foil sheet. Wrap the foil up tightly around the contents of the packets, seal them well.
- Over high heat, grill the foil packets for 10-12 minutes. Flip and grill an additional 10-12 minutes.
- Open the packets, let them cook an extra two minutes, and garnish with the fresh thyme leaves, serving immediately.

Hi, Linda! I’m so happy you want to try them 🙂 For the oven, cook them at 425 degrees for 20-25 minutes, flipping them at the halfway mark.
You cook the meat 20-25 mins as well?
I cook the potatoes & meat together in the foil packs, for 10-12 minutes on each side- flipping in between. Hope that helps!

This looks pretty darn good and I’m going to have to make it for la familia. Just wondering with the cooking times, what’s the temperature of the meat? Also, do you suggest adding veggies right in the same foil pack? I was thinking of either baby carrots, asparagus, or broccoli.

Manny, they really are and you will be so glad you tried them! The recipe card includes the cooking times, or at least what I do, and over medium high heat. As far as the meat temp, I don’t really check that with steaks since they’re generally safe to consume even when barely cooked. Yes, add the veggies right on in with the meat for maximum flavor, and you can’t really go wrong with any combination of veggies you choose to go with. My personal vote would be still use the potatoes, but also include either asparagus or broccoli.
This looks great! Do you think I’d be able to use stewing beef for this instead of the sirloin steak? I’ve had stewing beef in my freezer for a bit that I’d like to use up & its too hot for stew haha.
You can try it! I’d watch it though because with this even when cooked fully, the steak stays super tender and you wouldn’t want to lose that aspect.
Hi, we used the stew meat a few times and it came out very yummy 😋… we added lil xtra buyutter in the foil n still came out tender … we also added zucchini n squash

I’m wondering if I could do it in individual packs. I’m planning a get-together for 16 and was hoping that each person could take a pack. Do you think the timing would be the same?
Hmm, I’d probably lower the heat a bit since the meat will cook through quicker and consider par-boiling the potatoes then to make sure everything’s done at the same time. Let me know how it goes!

Cooking on high is very vague 10 to 12 min is more than I would grill a stake in each side steak was over cooked but the potatoes where great
