Easy Pan Eclair Recipe
This easy pan eclair recipe combines all the flavors of the French pastry in a no bake dessert. Clouds of creamy filling get layered with graham crackers and topped with chocolate for a winning combination everyone will love!

We’re talking about layers of fluffy filling, graham crackers, and chocolate that I don’t have to bake.
What is pan eclair?
Pan eclair is a fancy way of saying eclair cake.
Except it’s not really cake at all but layers of graham cracker, pudding, and chocolate.
Ingredients
To make this you’ll need:
- Milk
- Pudding mix– Vanilla instant pudding mix. Not the kind you need to cook.
- Whipped topping– The kind of whipped topping you find in the frozen section like Cool Whip. Let it thaw.
- Graham crackers
- Chocolate frosting– Your favorite store bought kind
How to Make
This pan eclair is effortless!
To make it just whisk the milk and vanilla pudding until it’s smooth.
Once it’s smooth, let the pudding mixture sit a few minutes and then fold in the whipped topping.
Then line the bottom of a 9×13 pan with with graham crackers so the graham crackers cover the bottom.
Spread a third of the pudding mixture over the graham cracker layers.
Repeat this with another layer of graham crackers and another pudding layer until you’ve used up all the pudding.
End with a graham cracker layer on top.
Then remove the lid and take the top off of the frosting.
Microwave the frosting for 30 seconds to make it easier to spread.
Pour the chocolate frosting evenly over the graham cracker layer.
Put it in the fridge and let it chill for at least 4 hours before serving.

Store leftovers tightly wrapped in the fridge for up to 3 days.
Tips and Tricks
- While this combination of vanilla pudding and chocolate frosting makes the classic eclair flavor combination, you can make this with any pudding and frosting flavor combination you want.
- Don’t skip letting this chill. It needs the time to chill to let the pudding mixture seep into the graham crackers and soften them some.
- The longer this sits the softer the graham crackers will get which is why I recommend only storing the for a few days.

- 2 4 oz pkgs vanilla pudding mix
- 1 8 oz tub cool whip
- 3-4 sleeves graham crackers
- 1 16 oz can chocolate frosting
Instructions
- In a large bowl, whisk together the milk and vanilla pudding until smooth, allow to sit a few minutes to thicken slightly, then gently fold in the cool whip.3 cups milk, 2 4 oz pkgs vanilla pudding mix, 1 8 oz tub cool whip
- Line the bottom of a 9x13 pan with graham crackers, then spread ⅓ of the pudding mixture over the graham crackers. Repeat the graham cracker and pudding layers until all the pudding is used up, and ending with a graham cracker layer on top.3-4 sleeves graham crackers
- Remove the lid and plastic cover from the chocolate frosting, then microwave for 30 seconds to make it easier to spread.1 16 oz can chocolate frosting
