Cake Mix Blackberry Cobbler

Cake mix blackberry cobbler gives you a traditional summer dessert but in the quickest, easiest recipe ever! No one will ever believe that this gourmet tasting cobbler is a dump and bake dessert with only 4 ingredients!

Blackberries are such a delicious seasonal goodie to take advantage of.

Bright, juicy berries are an absolutely magical ingredient in so many breakfasts and desserts.

That’s if I can resist the temptation to keep snacking on a couple at a time, until I’ve eaten the whole lot of them!

Of course when I know there’s a dessert as delicious as this easy blackberry cobbler at stake it’s easier to show a little self control.

What is a cobbler?

Cobbler is a dessert that has a ton of regional variations.

In the South it’s almost always a sweet not savory dish.

Some sort of fruit like peaches or cherries or another sweet filling like chocolate and marshmallows in this s’mores cobbler gets poured into a baking dish and covered with batter or sometimes biscuits or dumplings.

In this cake it’s sweet, juicy blackberries covered in cake batter.

Ingredients

To make this you’ll need:

  • Cake mix– A box of your favorite yellow cake mix
  • Blackberries– Fresh blackberries
  • Sugar– Granulated
  • Butter– Sliced into 8 tablespoons
  • Water– Cold water

How to Make

This cake mix blackberry berry cobbler is truly a dump and go recipe!

To make it just toss the berries and sugar together in a medium sized mixing until they are well coated.

Set them aside and let them rest for 10-15 minutes.

While the berries are resting, lightly spray a 9×13″ baking dish with non stick cooking spray.

Spread the cake mix out into the sprayed pan.

Give the dish a shake the dish so that it’s evenly spread out.

Scoop the berries and any juice they’ve released evenly out over the cake mix.

Pour the water gently out over the dish.

Mix just enough to incorporate some of the water, and have most of it settle to the bottom of the dish.

Spread the pats of butter out evenly on top of the cobbler.

Bake at 350 degrees for 45-50 minutes.

Remove the cobbler from the oven and let it cool a little to set.

Serve warm topped with a generous scoop of vanilla ice cream.

Storing Leftovers

Store any leftover cobbler tightly wrapped in the fridge for up to 4 days.

Tips and Tricks

  • The cobbler will still be a little gooey in the center when you take it out of the oven. That’s ok! It keeps cooking for a couple minutes after you pull it out of the oven and will firm up as it cools.
  • Vanilla ice cream isn’t a must but it is highly recommended. No ice cream? Top it with a huge dollop of whipped cream.
  • If you have leftover cobbler you’re storing in the fridge, I highly recommend warming the slices in the microwave before enjoying the leftovers.
  • The berry measurement and sugar measurement aren’t exact and that’s ok. You can use closer to 6 cups of berries for a fruitier cobbler, whereas 5 won’t be quite as berry filled. The amount of sugar is based a bit on your tastes and also if you are closer to 5 or 6 cups of berries.

Ingredients

  • 1 box yellow cake mix
  • 5-6 cups fresh blackberries
  • 1-2 tbsp granulated sugar
  • 1 stick of butter, sliced into 8 equal pieces
  • 1 1/4 cup cold water

Instructions

  • In a medium sized mixing bowl, toss the berries and sugar together until well coated. Set aside, and let them rest for 10-15 minutes.

  1. What a wonderfully simple cobbler! Your talk of summertime in the South has me itching to experience it for myself…although I’m not sure I could handle the heat + humidity with much grace 😉 Maybe if I add an extra scoop of ice cream to my cobbler. Thanks for sharing this at Fiesta Friday!

    1. If it was just the heat, I’d be ok- it’s the humidity that everyone here hates. Nobody handles it with grace either, they either hide out in the AC or next to some sort of large body of water, lol. Extra scoops of ice cream are also a 100 % acceptable way to cool off, too!

  2. Interesting! Was just looking for a time and temp to bake my cobbler when I saw your recipe for putting the cake mix in first. Most recipes out there have it going on top of the fruit. So, trying it your way this time. In the oven and can’t wait to see how it comes out! Love blackberry season! My favorite is simple syrup added to water or Sprite! And waffles, blackberry waffles! Yummy!

    I was disappointed with this recipe. The result was a layer of berries on top of dry cake mix I thought I mixed it sufficiently based on the given instructions, but I may not have mixed it enough. It appears to me that more liquid was needed, and more mixing of the berries with the cake mix.
