Cake Mix Blackberry Cobbler

Cake mix blackberry cobbler gives you a traditional summer dessert but in the quickest, easiest recipe ever! No one will ever believe that this gourmet tasting cobbler is a dump and bake dessert with only 4 ingredients!

Ingredients

  • 1 box yellow cake mix
  • 5-6 cups fresh blackberries
  • 1-2 tbsp granulated sugar
  • 1 stick of butter, sliced into 8 equal pieces
  • 1 1/4 cup cold water

Instructions

  • In a medium sized mixing bowl, toss the berries and sugar together until well coated. Set aside, and let them rest for 10-15 minutes.
    5-6 cups fresh blackberries, 1-2 tbsp granulated sugar
  • Lightly spray a 9x13" baking dish with non stick cooking spray. Empty the cake mix out into pan, and shake the dish so that it's evenly spread out.
    1 box yellow cake mix
  • Scoop the berries and any/all juice evenly out over the cake mix. Pour the water gently out over the dish. Mix just enough to incorporate some of the water, and have most of it settle to the bottom of the dish.
    1 1/4 cup cold water
  • Top with the pats of butter, spread out evenly.  Bake at 350 degrees for 45-50 minutes.

  • Remove the cobbler from the oven, it may still be a bit gooey in the middle- but that's ok. As it cools it will continue cooking a bit and 'set'.
  • Serve warm topped with a generous scoop of vanilla ice cream.

Notes

  • The cobbler will still be a little gooey in the center when you take it out of the oven. That's ok! It keeps cooking for a couple minutes after you pull it out of the oven and will firm up as it cools.
  • Vanilla ice cream isn't a must but it is highly recommended. No ice cream? Top it with a huge dollop of whipped cream.
  • If you have leftover cobbler you're storing in the fridge, I highly recommend warming the slices in the microwave before enjoying the leftovers.
  • The berry measurement and sugar measurement aren't exact and that's ok. You can use closer to 6 cups of berries for a fruitier cobbler, whereas 5 won't be quite as berry filled. The amount of sugar is based a bit on your tastes and also if you are closer to 5 or 6 cups of berries.
